In the ancient Aztec empire, chia seeds were a staple. Grilled and then roughly ground to form the traditional pinole, they were used in many dishes. The arrival of the Spaniards in the 15th century abruptly ended the Aztec civilization and the culture of the chia. The Chumash, Native Americans who lived in southern California before the arrival of Christopher Columbus, would have consumed chia seeds to improve their physical performance.

During the 1990s, the chia was put back on the agenda. Indeed, a patent was granted to a US company (Core Naturals LLC) for a chia cultivar, Salba, selected according to the increased content of its seeds in omega-3. This company produces chia in Peru and sells it all over the world. It has also established itself in Ontario as Salba Nutritional Solutions Inc. It funds clinical research on the beneficial effects of the product at the University of Toronto.

Chia seeds, like sesame seeds, are relatively small. They are generally brown, more or less dark, but some varieties are white, beige or grayish. The color of the grain has no influence on its nutritional value, but may be of interest for the coloring of the food preparation.

Pale chia (or white) has a rather neutral taste. That of brown seeds (or black) is a little more pronounced, while remaining pleasant. They can be eaten as is; they can also be grinded to incorporate in recipes or sprinkle them.

After about 30 minutes in water or juice, the chia, like psyllium, forms a mucilage (viscous liquid). The seeds crack less under the tooth than when they are dry: their texture then reminds a little that of the poppy seeds in the cakes.

Chia seeds are naturally rich in dietary fiber and "good fats". They contain in particular 15% to 17% of omega-3 in the form of alpha-linolenic acid (ALA). The seeds also contain 5% to 8% gamma-linoleic acid (AGL), an omega-6, which adds to their interest. Indeed, some people are not able to synthesize this substance and therefore need a direct source. Borage oil (20% GLA) and evening primrose oil (10% GLA) are the best known sources of GLA, but they only exist as supplements. Hemp seed oil contains 2%. It has been shown that 15 g of Chia root contain 3750 mg of omega-3 and 1050 mg of omega-6.

The high fiber content of the chia and its mucilaginous properties make it an attractive product for increasing fiber consumption, especially for people who suffer from constipation.

Due to its high content of fatty acids and fiber, chia consumption is considered effective in reducing cardiovascular risk factors such as diabetes, high cholesterol and hypertension.

Two studies done at the University of Toronto and funded by Salba Nutritional Solutions have achieved results in this direction. In the first, people with type 2 diabetes followed a diet that included 33 to 41 grams of chia a day. After 12 weeks, the researchers found a reduction in certain cardiovascular risk factors: blood pressure, the level of C-reactive protein (a marker of inflammation) and that of von Willebrand factor (a protein that increases blood clotting). effects have been associated with chia's ability to limit the usual increase in blood glucose after a meal.

An independent study of people prone to obesity, however, reversed the effects of chia dietary supplements (50 g per day) on inflammation.

According to the European Committee for Novel Foods and Processes, the chia has an allergenic potential that is not yet clearly determined. People who are allergic to other seeds (eg, sesame or flaxseed) should be cautious because of possible cross-allergenicity.

Chia is not recommended for people with prostate cancer or at risk for prostate cancer due to high levels of alpha-linolenic acid.
