Crepes ohne Weizenmehl und ohne Kuhmilch

Zufallsfund letzten Sonntag. Die leckersten Crepes die ich je gemacht habe. Leider habe ich keine genauen Mengenangaben. Aber die Grundzutaten kann ich schonmal mitteilen. Ich probiere immer mal intuitiv unterschiedliche Mehlsorten und Varianten aus, da ich Weizen und Milch nicht vertrage. 

4 Eier - schaumig schlagen
50g Butter  ( man die zwar weglassen, aber es ist ein wichtiger Geschmacksbestandteil wie ich festgestellt habe)
100ml Kokosmilch
ca 100 g Buchweizenmehl (Nur so viel das die Masse zäh dickflüssig wird)
3 EL Kartoffelmehl
Salz, Zimt, 
2 EL Zucker

Alles zusammen gut verrühren. Wenn zu flüssig dann einfach etwas mehr Mehl rein, oder wenn es zu teigig ist, dann mehr Kokosmilch.
Etwas Öl (so das es den Boden dünn bedeckt) in einer Pfanne aufheizen
Die Masse in der Pfanne bei niedriger Hitze (zb. Stufe 4 von 10) ausgießen.
Warten bis der Crepe zur Gänze  fest geworden ist.
Wenn der Crepe anhängt, obwohl er schon fest ist, dann war die Pfanne vermutlich zu heiß.
