<center>Ich habe mein Parfait in einer Lego-Eiswürfelform gefroren, aber natürlich gibt es da tausende Möglichkeiten.</center>

**Quarkparfait**
50g Zucker I
2 (60g) Eiweiß
50g Glucose
50g Zucker II
50ml Wasser
Saft von einer Zitrone
250g Quark
Mark einer Vanilleschote
250g geschlagene Sahne

Zucker I zusammen mit dem Eiweiß und einem Spritzer Zitronensaft in einer Küchenmaschine steif schlagen.
Währenddessen die Glucose mit dem Wasser, Zucker II und dem restlichem Zitronensaft erhitzen und ca. 2 Minuten köcheln lassen.
Nun den heißen Sud langsam zu dem Eiweiß in die Küchenmaschine gießen und das Eiweiß solange weiter schlagen bis die Masse erkaltet ist. 
Den Quark mit der Vanille mischen und unter das steife Eiweiß geben. 
Zum Schluss die geschlagene Sahne vorsichtig  unter die Masse heben und alles in Formen abfüllen.
Das Parfait nun in der Gefriertruhe mehrere Stunden fest werden lassen.

**Curd parfait**
50g sugar I
2 (60g) Egg-white
50g glucose
50g sugar II
50ml water
juice of a lemon
250g curd cheese
pulp of a vanilla pod
250g whipped cream

Beat sugar I together with the egg white and a dash of lemon juice in a food processor until stiff.
Meanwhile heat the glucose with the water, sugar II and the remaining lemon juice and simmer for about 2 minutes.
Now slowly pour the hot broth into the egg white in the food processor and continue to beat the egg white until the mixture has cooled down. 
Mix the quark with the vanilla and add to the stiff egg white. 
Finally, carefully fold the whipped cream into the mixture and fill into moulds.
Let the parfait solidify in the freezer for several hours.
