Game meat is fairly easy to get to if you know a hunter. Here is a delicious recipe that can be used with less worthwhile pieces of meat from most game. Here I have used moose are wonderfully delicious meat with a good characteristic flavor.
ingredients:
1 kg vildtsmåkød i 1 cm tern
250 g bacon i tern
2  chopped onions
2-3  carrots, diced
2  celery sticks, dice
5 cloves  finely chopped garlic
200 g  champignon
200 g  soaked dried mushrooms
2 dl  red wine
5 dl  broth
1 dl  whipping cream
5  bay leaves
15  crushed juniper
2 teaspoons  dried thyme
 salt & pepper
Procedure:
Fry the bacon in a frying pan until crisp and fat is melted. Pour the fried bacon into a large heavy-based saucepan. Brown wild meat on all sides in the bacon fat, a little at a time so the pan temperature does not drop too much. Add wild meat in the pot as it is browned. Sauté the onion in the pan until it is glassy, not browned, pour in the pan. Saute carrots, celery short in the pan and cook it with the wine for a few minutes. Pour the mixture over the meat, add broth, cream and water enough to cover køddet with a few cm. Add the bay leaves, thyme and juniper. Season with salt and pepper and let the pot simmer very quiet for 2-3 hours. 

Serve with a good mashed potatoes and such. Brussels sprouts.
