My dear old mum is visiting me for Christmas , and as usual I ask her nicely to bring me a care-package of food items from home.

# _Coconut Ice_

I always ask her to bring me things that are either difficult to find in Thailand, or expensive due to the import taxes. Among the items I scored this time were; 2 bottles of Australian red wine, 3 different types of cheese, muesli bars, a tin of milo, 3 packets of Tim-Tams and a pavlova. Yes.. a pavlova, if you're not sure exactly what that is, we'll be finishing it with fresh tropical fruit and serving it up on Christmas day...I'll take some pics.

Also among my goodies was this little treat; homemade coconut ice. Now, this is not a particularly fancy or even difficult treat to make, but I do enjoy it, and my mum makes it pretty good.

Coconut Ice is simply made by mixing dessicated coconut, condensed milk and sugar, and leaving it to set in the fridge for a few hours. The result is a candy that is sweet, and chewy with a soft-grainy texture. A Little pink food colouring is added to give it the half/half appearance, though I don't know why...Anyway, I had a rather large container of these and thought that I should take some pics to share on steemit before they are all gone. This is all that is left.....Hope you enjoy :)
