Yesterday I searched for the very basic curry spices, cumin coriander and turmeric. There aren't too many of those things in regular supermarkets but I found enough at Walmart to make a delicious vegetable curry.  I am not an expert at making any complex Indian curries so I stick to the basic spices. I found dried ground cumin, but no dried coriander so I used fresh. I also was unable to find ground dried turmeric which is what I have always used in Canada. Here fresh turmeric is plentiful and I don't actually know what they use it for. So I purchased some of those roots along with ginger. I just ground garlic, ginger, turmeric, chili, coriander, and green onions in the blender then sauteed them after I sauteed the dry spices in peanut oil. I try to stay away from oil but for certain things I'll use it.  I added the rest of the mixed vegetables which consisted of spinach, kale, carrots, broccoli, cauliflower and chayote squash which is a favorite of mine. I covered it with water and vegetable soup base then let it cook until the vegetables were tender then adding a little bit of coconut cream to thicken it a bit. I was lucky to find some basmati rice which I didn't think would be in Mexico but I did so that is what I served the curry with.  It was a perfect lunch with the perfect spice for us. Normally we don't eat desert because we avoid sugar but I accidentally bought coconut cream sweetened with sorbitol. I decided to make a desert with it. Plantains are something I have never used much but here in Mexico they are everywhere so I thought I would give them a try.  It was worth it. I wrapped them in banana leaves that I got from the yard(I hope no one notices), then steamed them with coconut cream and raisins. After I boiled some additional coconut cream and poured it on top of the plantains.  This was a hot sweet desert that I am now addicted to. Oh oh.  Plantain is my new thing. I need more.
