Easy "Tallarin Saltado" Recipe for Poor Singletons

During my travels in South America, food was the only thing that made stay longer in Peru. I have been in love with Peruvian food since then. The country is known for its wide variety of flavorful dishes. One of my favorites is this typical dish called "Tallarin Saltado." It is very easy to prepare and I recommend it to those who are living alone and are lazy to cook something grand for themselves. The leftover is good for recooking the next day, making the dish even more flavorful!

Here's my own version of the recipe as I don't have much in the refrigerator and other ingredients are expensive. You can add cilantro or more vegetables if you want. I don't have access to crushed red pepper flakes but it may be better if you can add it to the dish.

# Ingredients:

1 lb cooked spaghetti
1 lb of thinly sliced pork  (this is usually beef tenderloin)
1 cup organic soy sauce
1⁄2 cup organic apple cider vinegar (this is usually white wine vinegar)
1 large red onion, cut in wedges
3-4 tomatoes, cut in wedges (remove the seeds if you want)
Lots of pepper to taste
Fresh basil

If you are gathering basil from your garden, make sure to wash the leaves if you don't want to eat spiderwebs and other bugs too.

Now mix soy sauce, pepper, and vinegar then marinate the pork for 30 minutes or more. Even better if you marinate it overnight. I included the fat, skin and everything of the pork. Because I'm a savage, I eat everything.

Add oil to a heated pan then sauté the marinated pork. Set aside.

Sauté briefly the onion and tomato wedges. Drizzle in the remaining soy mixture and add the sauteed pork. 

Add the cooked spaghetti and mix with the contents of the pan.

Serve topped with fresh basil (or cilantro). Sprinkle generously with pepper.

I didn't add salt anymore as the soy sauce is salty enough.  Buen Provecho!
