Leek, Ham & Cheese Pie | The Best Part of Quarantine, Foooooddd!!

I've said this before, the best part of quarantine for me is food. I am enjoying trying out different foods, as well as preparing them. Yesterday I decided to try out one of my faves in Madrid so far, this **leek, ham & cheese pie**, it never disappoints.

This is going to be a quick recipe for anyone who is feeling explorive with their food or just anyone wanting to try out something new.

# Step One- Prepare the Dough.
I didn't manage to capture that bit because I wasn't planning to make this into a post, but seeing I have some free hours, I've decided to make this post. It's pretty easy though and you should be able to do it with out visuals.

Mix baking flour, milk, butter and salt to taste to your preference. I'll assume you know how to knead and get a great consistency. Once done, put it in the oven for 10 mins, just to firmen it enough for the pie ingredients.

# Step 2 - Clean, Cut & Boil Your Leek.

Oddly, I really enjoy this part of the cooking process. I love the smell of the onions, I love to cut my veggies too. Make sure to cut off the green leaves, they are pretty rough and not that tasty. You only need the white parts of this root.

It's very therapeutic, even more so if you do it over a glass of wine and great music.

#### Ideally, you need to biol them for about 10 mins, to soften them. After which you should drain them and leave them to cool for like an hour.

# Step 3- Mix & Oven

Once cool, in a bowl, add your leek, bacon, some cream (of choice, I use coconut cream), salt & pepper, mix thoroughly. Once done, add some egg white, and then add it to your already made dough. Add some cheese on top and put in the oven for 30 mins, or until your cheese browns to your preference.

# Step 4 - Serve & Enjoy!!

We had ours with some Salmon and a glass of red wine. It was very delicious, infact, might be having some more today for lunch. Very easy quick fix for those short on time.

The best part about this recipe is you can adjust it to your preference. Don't like ham? How about bacon,chicken, beef etc.. Be creative with it, you'd be surprised what you can come up with.
