My Actifit Report Card: January 17 2019

26 years ago today my baby was born!  Today he is a kind and caring gentleman.  I asked how he want to celebrate.  He wanted to have dinner with his grandparents.  I made arrangements to take Mom from the nursing home over to my Dad's assisted living apartment for dinner.

I made a lobster pie and scalloped potatoes.  The lobster pie was amazing and easy to make.  The hardest part was getting the meat out of the shell.  Then I melted 3 sticks of butter, added some cooking sherry.  The topping was a mixture of crushed Ritz crackers, Cheese=its, and Oyster Crackers.  I baked it for 25 minutes.
