If you are on a diet, try to resist this... :)

Strange cloudy, warm and windy weather isn't something we expected from winter. We wished for a cold, but snowy days to kill all the germs around us. But hey, now I can spend more time in the kitchen without feeling guilty while testing my new oven. 😊

A last-minute realization, that my best friend is having her birthday, and a quick moment to check the pantry if I have it all for a surprise was enough to become creative.

While the girls were busy discovering some new old toys, which I put in their room, I was able to start the magic. I found one amazing recipe online to make a cake dough. Just eggs, flour, sugar, milk, water, and baking powder was enough. I only changed the recipe so much, that I replaced vegetable oil with milk. I must say, I was amazed with the result. The cake dough which I usually buy for making a cake is now in the past for sure.

While the dough was baking I was scared... It didn't look as I hope it will, and I was holding my fingers crossed through the whole time. Luckily at the end, it looked fluffy and light, and it smelled amazing.

When I was thinking about the filling I was juggling two ideas through my mind. A fruit cake, with canned goodies, or a simple but luscious Nutella cake with bananas.

and I whipped some cream with vanilla sugar to make two separate fillings.

Then I peeled and sliced some bananas. And for the final touch, I was warming some milk with rum to soak the cooled cake dough.

Exchanging the layers I made it happen and finished it with some coconut flour to hide all flaws.

The result was apparently delicious because it disappeared soon after candles were blown. I know that it could be better. I know what would I do differently next time. But I am not regretting making one. Especially when I made it as a surprise for a person who means a lot to me.

So if you read my post today I hope you can stay away from the sweets. 😊 I must say I am really struggling with myself. But luckily it's time for bed, so enough food for me for today... 😉

And just a funny thing for the end I will share with you a thought, which my coworker told me today: "I am on two diets, just because I am not full enough after just one." 😊 It's lost a bit with my poor translation, but still, I think you got the idea what I wanted to say to make you smile. That is very delicious post @emmamia, you wake up my appetite for cakes :(  But I am grateful you shared your recipe. My cooker is horrible, actually it is old one, so only that I can do is a thin bread Pizza, because it does not need much time. I think I will do it tomorrow but we may buy some cake :)

I was in the same situation up until two months ago. I didn't know if I will bake or burn the bread with the same baking parameters. So now, when I replaced the oven I finally have the opportunity to make some new and exciting food. So mostly my working weeks evening routine is browsing through the web searching for a recipe I would love to try on the weekend... 

Regarding what you wrote-did you managed to stay away from sweets, or did you get a cake for you?😄

I can't resist sweets, when we were shopping last time then looked through different cakes but at the end decided to buy some mix of chocolates, as there are plenty due to coming Eastern, like Easter bunny. I love one from Lindt, Swiss chocolate, their chocolate odor once you open wrapping, that is a replacement for cake :)
