A load of fresh sea bream was poured out onto the fish section at *Metro’s* Seafood Section yesterday. The Mann's Papa, who was out shopping, brought some home!

We always try to eat fish ASAP, because *freshest is bestest*, isn’t it? =D

In my experience, sea bream is often paired with potatoes and tomatoes and the like.

I decided to make a sandwich incorporating those ingredients. The base? *Potato pancakes!!!* Yup, the Mann won’t be able to eat this one. =P

Since I live in Germany, where *Kartoffelpuffer* (potato pancakes) are traditionally eaten with apple sauce or sour cream, I decided to add grated apples into my potato pancake mix and spread sour cream on top of the bottom ‘potato pancake’ slice.

Btw, the end result was totally my cup of tea. The infusion of the roasted garlic and thyme sang beautifully through the potato pancake. The crisp lettuce, juicy tomatoes, and sour cream cut through the richness, and refreshed the palate. And fresh sea bream pan-fried in butter, garlic, and salt? Nothing else needs to be said. *Mmmmmm…can’t wait to make this one again*

<h1>INGREDIENTS</h1>

Pan-fried Sea Bream*
Roasted Garlic & Thyme Potato Pancakes (bread replacement)*
Sour Cream
Iceberg lettuce leaf, resized
Date cherry tomatoes, sliced thinly lengthwise

***Pan-fried Sea Bream***
Fresh Sea Bream, gutted and cleaned
Unsalted Butter
Garlic Cloves, peeled
Sea Salt, to taste

Generously season the fish with salt. Pan-fry the fish and garlic in the butter, spooning the flavoured butter over the fish repeatedly. When garlic cloves are well-roasted, remove and set aside for use in the Potato Pancakes.

When fish is done, cut out a section of the fish and check that there’re no bones (if you use the back area, there will be few if not zero bones for you to pick off). 


***Roasted Garlic & Thyme Potato Pancakes (bread replacement)***
Potatoes, finely grated
Royal Gala Apple, grated
Yellow Onion, grated
Salt and Pepper, to taste
Roasted Garlic Cloves, chopped
Dried Thyme Leaves
Plain Flour
Chicken Egg

Combine all grated items and season with salt and pepper. Using a sieve and paper towels/cheese cloth, press out all liquid from the mixture till it is relatively dry. Add all the other ingredients and mix   well.

Pan-fry on high heat till nicely browned. Set aside on paper towels and dab with more paper towels to remove oil.  


<h1>ASSEMBLE THE SANDWICH</h1>

Choose two matching potato pancakes to make up the top and bottom of the sandwich. Spread sour cream on the bottom one.

Place lettuce leaf over the bottom potato pancake and arrange tomato slices on top.

Add the filleted section of the sea bream and, finally, the remaining potato pancake slice.

Gestern gab es viele frische Doraden in *Metro*. Mein Schwiegervater, der einkaufen war, brachte welchen mit nach Hause.

Wir versuchen immer Fisch so schnell wie möglich zu essen, weil am frischesten ist am besten, oder? =D

Meiner Meinung nach, passen Doraden gut mit Tomaten und Kartoffeln. 

Deshalb habe ich mich entschieden, diese Zutaten zu kombinieren. Die Sandwichbasis? Kartoffelpuffer! Leider kann mein Mann das nicht essen, weil er auf einer kohlenhydrat-freie Diät ist.

Da ich lebe in Deutschland, wo Kartoffelpuffer traditionell mit Apfelsoße und Sauerrahm gegessen werden, möchte ich auch zerrissene Äpfelstücke in meine Kartoffelpuffer rein tun. Ich werde auch Sauerrahm auf meine unterer Kartoffelpuffer streichen.

Übrigens war das Endergebnis unglaublich lecker! Es hat mir sehr gut geschmeckt! 

Die Infusion des gerösteten Knoblauchs und des Thymians in der Kartoffelpuffer war super! Der knackige Salat, saftige Tomaten und Sauerrahm sind zusammen ein gute Kontrast zu den sehr reichhaltigen Kartoffelpuffer. Mein Gaumen war erfrischt. Und die Dorade in Butter gebraten? Es muss nichts mehr gesagt werden.

*Mmmm…ich kann nicht warten, diese Gericht wieder zu machen!!*

Kartoffelpuffer mit gerosteter Knoblauch und Thymian (statt Brot)*
Sauerrahm
Eisberg Salatblatt, klein gemacht
Dattel Cherry-tomaten, in Längsrichtung dünn geschnitten

***Gebratene Dorade***
Frische Dorade, ausgenommen und sauber
Ungesalzene Butter
Knoblauchzehen, geschält
Meersalz und Schwarzer Pfeffer, nach Geschmack

Großzügig den Fisch mit Salz und Pfeffer würzen, innen und außen. Braten Sie den Fisch und die Knoblauchzehen in Butter. Regelmäßig die aromatisierte Butter über den Fisch löffeln. Wenn Knoblauchzehen gut geröstet sind, entfernen und für die Kartoffelpuffer beiseite legen.

Wenn der Fisch fertig ist, filetieren Sie den Fische und überprüfe, dass es keine Gräten gibt (wenn Sie den Rückenbereich benutzen, gibt es nur wenige, wenn nicht null, Gräten rauszunehmen).

***Kartoffelpuffer mit gerosteter Knoblauch und Thymian (statt Brot)***
Kartoffeln, fein gerieben
Royal Gala Apfel, gerieben
Gelbe Zwiebel, fein gerieben
Meersalz und Schwarzer Pfeffer, nach Geschmack
Geröstete Knoblauchzehen, klein gehackt
Getrocknete Thymianblätter
Weizenmehl
Hühnerei

Kombinieren Sie alle geriebenen Zutaten und würzen Sie mit Salz und Schwarzer Pfeffer. Die Mischung in einem Sieb rein tun. Mit diesem Sieb und Küchenpapiertücher / Käsetuch, drücken Sie alle Flüssigkeit aus der Mischung, bis es relativ trocken ist. Fügen Sie alle anderen Zutaten hinzu und gut mischen.

Braten auf hohe Hitze bis gut gebräunt. Legen Sie die Kartoffelpuffer auf Küchenpapiertücher und mit mehr Papiertüchern tupfen, um überflüssigen Öl zu entfernen.


<h1>DAS SANDWICH MONTIEREN</h1>

Wählen Sie zwei passende Kartoffelpuffer, um die Oberseite und Unterseite des Sandwiches zu bilden. Sauerrahm auf die Unterseite verteilen.

Legen Sie Salatblatt über den unteren Kartoffelpuffer und die Tomatenscheiben drüber ordnen.

Fügen Sie die Doradenfilets und schließlich die verbleibende Kartoffelpuffer-Scheibe hinzu.

Awesome - You got it girl. Fresh seafood/fish has to be consumed asap. You know how to enjoy life, hehe... Fantastic sandwich!!! You also reminded me one time we bought fresh fish at the fish market in Tokyo and we brought it to the restaurant nearby and ask them to cook it for us asap too.
