Warm, soft crumbly sweet cornbread wrapped in a crispy shell...yes, please! 

Cornbread is definitely one of those things that can really add to a meal, especially if you are eating something super savory like a gumbo or chili. Then your hardest decision is whether to eat it on the side or crumble it up into the bowl. I like to do a little of both, haha. You can't have enough! 

Well, this past week, Mexican Gumbo was on the menu. We usually eat it with tortilla chips, but as I was shopping, I was convinced I only needed one bag of  chips...and that one bag was completely gone thanks to a previous taco night and everyone having a bit here and a bit there.  I've learned my lesson now though...always buy two. 

But there was a huge positive side...it gave me an excuse to make a batch of sweet cornbread! 

I grew up with Jiffy cornbread or dry white cornbread. I know my voice doesn't come through, but imagine I said "dry white cornbread" slowly and without much excitement. The Jiffy was always made in a casserole pan and the dry white was in a cast iron.  I was definitely pro the sweet bread, but I loved the crispy outside of the cast iron made ...so the obvious solution is to make a sweet version inside the cast iron! 

I needed to find a good vegan recipe first. Like I've mentioned previously, I *could* do the hard work myself oooorrrrr I could scour the internet, and of course Nora Cooks was right there ready to help me out! The only alteration I made was reducing the sugar to half and then using honey. I've made it with sugar and it was definitely a winner, I've also used maple syrup in a pinch which turned out delightful! Halving the sweetener still made it really sweet, and we have a huge sweet tooth here, which is why I like to sub for honey when I can, haha. But if you decide to use the full amount, let me know how it goes!

So this time around, our oldest the Artist, said he wanted to help cook. He mentioned that he likes to cook breads the most, and he definitely comes by that naturally. It's my favorite and my dad's favorite too! He also said he would rather cook than do the dishes, which is the swap out in our house. That made me laugh...and I completely agree. Once I announce dinner is done...I'm out!

He did a great job! The cornbread turned out moist in the inside and crispy and delicious on the outside! He may turn into our cornbread maker!
