Hola amigos de #steemfoods un placer saludarles, espero estén bien. 
Hoy vengo a compartir con ustedes una rica receta de **JALEA DE MANGO** hecho con mango maduro y pintón. 

Este dulce, tradicional de mi estado y uno de los más comunes. 

<Center> JALEA DE MANGO</Center>

**Ingredientes**
- 7 mangos entre maduros y pintones.
- 1 taza y ½ de Azúcar
- Vainilla

**Preparación** 
_1er paso:_ Lavamos bien los mangos y le cortamos la punta de arriba. Luego los ponemos en una Olla con suficiente agua y los ponemos a sancochar. 
A medida que vaya hirviendo los mangos se irán poniendo flojos e irán agrietándose y perdiendo la concha.

_2do paso:_ Una vez sancochados los mangos, poner a escurrir en un colador. Cuando estén fríos, de manera que se puedan agarrar con la mano sin quemarse, se les quita la concha y con una cuchara le vamos raspando la pulpa, esta se va echando en un caldero que es el que más adelante irá a la candela.

_3er paso:_ Una vez quitada toda la pulpa de todos los mangos, lo montamos a fuego medio y se le agregará una taza de azúcar. A medida que vaya hirviendo se le incorpora la otra media taza de azúcar y unas gotas de vainilla ( al gusto). Se mezclará con una paleta de madera por unos 10 minutos, o hasta que vaya tomando una consistencia espesa y de color oscuro.

_4to paso:_ Luego, retiramos del fuego y dejamos reposar, para así pasarlo a nuestro envase de vidrio y enfriar.

La jalea debe tomar una consistencia dura, más que todo por arriba. Por dentro estará medio flojo y suave.

This sweet, traditional from my state and one of the most common.

 **Ingredients**
 - 7 mangoes between ripe and pintones. 
- 1 and ½ cups of Sugar
 - Vanilla

**Preparation**
 _1er step:_ We wash the handles well and cut the top tip. Then we put them in a pot with enough water and put them to boil. 
As the mangoes boil, they will become loose and will crack and lose the shell.

_2do step:_ Once the mangoes are parboiled, put them to drain in a colander. When they are cold, so that they can be grasped with the hand without burning, the shell is removed and with a spoon we scrape the pulp, this is poured into a cauldron that is the one that will later go to the candle.

_3rd step:_ Once all the pulp has been removed from all the mangoes, we mount it over medium heat and a cup of sugar will be added. As it boils, add the other half a cup of sugar and a few drops of vanilla (to taste). It will be mixed with a wooden paddle for about 10 minutes, or until it takes on a thick, dark consistency.

_4th step:_ Then, we remove it from the heat and let it rest, in order to transfer it to our glass container and cool.

The jelly should take on a hard consistency, mostly on the top. Inside it will be kind of loose and soft.
