Sunday Samplings:Ratatouille

I think I like where this "It's Sunday so I should plan meals for a week" idea is coming in.  I was away for a mini vacation the past few days and was gifted some zucchini from my families garden. This isn't your usual store bought stuff. This is GINORMOUS.

The pencil is for scale. I won't eat wood 😉.  I had no idea what to make with it so I asked our friends on discord. Someone suggested "Ratatouille". It is something I haven't made before so I looked up a recipe.  Here is the one I used:

It's got an Italian flare to it because why not!?

Looks lovely, and that's coming from someone who hates cheese with a passion!

Over in the UK we call them courgettes, not zucchini, and when they get bigger they are marrows and usually hollowed out, the insides cooked with something else then re-stuffed and roasted.

In a good year I'll get 2-3 courgettes a DAY, I tend to over plant them :)
