Le piment, ... c'est chaud dans la bouche.
Récemment j'étais invité chez des amis qui sont des adeptes de la ***cuisine épicée*** et notamment des piments.

A cette occasion, j'ai entendu parler des piments les plus hots du monde tels le ***Trinidad Moruga Scorpion***, le ***Piment Naga Viper***, le ***Nagas Bhut Jolokia***, ou encore le ***Piment Habanero*** (*ou piment Antillais*).

Bien entendu, il y a eu dégustation de quelques piments bien costauds et, franchement, ça arrache la gueule ! Certains d'entre nous en pleuraient presque, c'est dire l'intensité de la piqûre de cet aliment.

<center>***Mais précisément, d'où vient cette impression de forte brûlure ?***</center>

Cela est dû à un composant spécifique connu sous le nom de [capsaïcine](https://fr.wikipedia.org/wiki/Capsa%C3%AFcine). Cet alcaloïde se niche dans le placenta des fruits (*car oui, le piment est un* ***fruit***).

Une fois que vous croquez dans le piment fort, la capsaïcine va activer les récepteurs qui réagissent à la chaleur et qui sont situés sur la ***muqueuse buccale***. D'où cette sensation de brûlure car, en temps normal (*donc hors ingestion de piment*), ces récepteurs ne se déclenchent que si la température est supérieure à ***44 °C***. Notre cerveau interprète ce signal comme étant une brûlure !

Certes consommer des piments forts donne du goût à la cuisine mais cela peut avoir des effets néfastes comme des ***reflux gastro-œsophagien*** (*pas très agréables*), faire apparaître ou aggraver des ***hémorroïdes*** ou, pire, déclencher un ***cancer de l'estomac***. 

Il apparaît donc assez raisonnable de limiter la consommation de piments forts.

De façon assez étonnante et, inattendue pour moi, j'ai appris qu'il existait une échelle (*non, pas celle de Richter*) pour classer les piments du doux au très fort selon la sensation perçue. Bien entendu cela est assez subjectif.

Pour la petite histoire, sachez que cette mesure constitue [l'échelle de Scoville](https://www.sauce-piquante.fr/content/19-echelle-de-scoville) créée en 1912 par le pharmacologue [Wilbur Scoville](https://fr.wikipedia.org/wiki/Wilbur_Scoville).
