Japanese Somen and Senbei (Ricecracker)

<h2>Everybody loves Japanese food, but most of my friends only know Sushi, Ramen and Tempura.&nbsp;</h2>
<p>Japanese cuisine is one of the most diversified cuisines in the world, so today I want to introduce something for hot summer days.&nbsp;</p>

</a><em>Things to buy:</em></h2>
<ul>
  <li><a href="https://en.wikipedia.org/wiki/S%C5%8Dmen">Somen </a>Noodles</li>
  <li><a href="http://www.justonecookbook.com/how_to/mentsuyu-noodle-soup-base/">Mentsuyu (prepare it, or just buy in any japanese supermarket)</a></li>
  <li>Welsh Onion</li>
  <li>300ml cold drinking water (put some ice cubes into the water)</li>
</ul>
<h2>Add-Ons</h2>
<ul>
  <li>Natto (if you like Natto)</li>
  <li>Tempura (if you want to make it really tasty)</li>
  <li>Shiso (Hard to get)</li>
</ul>
<h2><em>Instructions:</em></h2>
<p>Somen is like pasta, you just need to boil water and put the noodles inside. It is usually 1-3 minutes. You need to cool down the Somen, so in countries with clean water, use tap water to wash it and cool it down. After that put 10 ice cubes into the noodles so they really cool down.&nbsp;</p>

<em>Prepare the Dip</em></h2>
<h2>1/3 Mentsuyu + 2/3 Cold Drinking Water + Onions (+ Natto/ Shiso)</h2>
<p>Put noodles into the Cup and try a bit, sometimes the Dip is too strong, add more water if it's too salty.<br>

<p>To make the Somen taste even better, try to add Natto or Shiso. That really enhances the taste. If you know how to make some tempura, than prepare tempura and eat it with the Somen. This adds a layer of luxury, if you add Tigershrimp Tempura or Vegatable Tempura if you are Vegetarian or Vegan.</p>

@knozaki2015 - and very spicy .. you could tell them "niet noy" meaning not too hot but it still is too spicy. I didn't know they're sugary.  No wonder, I was pigging out back then, I thought they were just so delicious.

They really put much attention to the details and the way they prepare their dishes.  I love Korean food the most -they are almost the same -
The Jap's however made theirs lighter than that of the SKoreans.

I also had Japanese students back then ...
They invited me for dinner most of the time because back then I tutored their kids in the evening.  Their food isn't as spicy as that of the Koreans.  
Both of them value eating food with great health benefits though. 
They didn't just served me soba or somen or udon but a home cooked family dinner style with side dishes, too.  I can't forget the cabbage roll my first Japanese family has served me with Yakitori their mom cooked herself.  
The only difference was - the Japs are more reserved than the my Kr students.  I don't remember laughing out loud on any of the dinners I had with some of my Jap students.  I just remember - there were many moments I forgot my name because their food were freaking delicious - both Korean and Japanese .

I actually meant - they are the same when it comes to the attention to the details,the way they prepare their dishes - almost like a ritual.. and health benefits - not the taste .

@knozaki2015 I cried when I first had my sushi I didn't know that wasabi taste like what it taste like.  My ears smoked like that of a  dragon in anime  and tears uncontrollably rolled down my cheeks and my nose run but I love Sushi to death!

I love your posts about Japanese food as I have said before it my favourite cuisine in the world and my time in Japan was amazing not just because it is  a beautiful and fascinating place but because the food is the best in the world IMO. yes somen and soba. Somen is white noodles, while soba is Buchweizen Noodles. So you can try both. 
for soba get some nori papers, cut them in little stripes and add them onto the noodles!
you can buy it in any asia market or japanese market in hamburg !
