<table> <tr><th>Deutsch </th><th>English </th></tr> <tr> <td> Hello liebe Freunde, wie versprochen werde ich heute das Rezept für den Geburtstagskuchen meiner Tochter posten. <br> <br>Ein paar Bilder sind von früher, da ich ein paar mal geübt habe und zwar mit verschiedene Variation von und dem kleineren Kuchenform. <br> Ich möchte doch nicht, dass ich ein "failed" Kuchen genau an ihrem Geburtstag backen würde. Die Prinzessin wäre in so einem Fall bestimmt sehr enttäuscht. <br><br> Ein typischer Kasutera-Kuchen sollte eine braune Oberfläche haben und innen hell sein. <br>Das könnt ihr dann auf dem Bild sehen, in dem der Kuchen noch nicht dekoriert worden ist und klein (ich habe nur ein halbes Rezept gemacht). <br> Bei dem anderen Kuchen, wo ein bisschen Risse auf der Oberfläche zu sehen ist, ist der Kuchen nicht mit dem traditionellen Rezept bzw. Methode gebackt worden. <br><br> Der Geschmack ist genauso gut, hat zwar keine typisch braune Oberfläche aber er schrumpft fast gar nicht. <br> Also, sehr ideal vom Konsistenz her, federn weich, aber die Kruste ist nicht gerade zufriedenstellend. <br> Ich muss wohl noch einmal versuchen, etwas länger zu backen und ein tick höhere Temperatur zu stellen, um zu wissen, ob ich dieselbe Kruste wie der traditionelle Kuchen aussehen sollte. <br> Abgesehen davon, schmecken beide super lecker. <br>Ich werde beides Rezept hier aufschreiben. <br> <h3> Hier ist das erste Rezept. </h3> Zutaten:<br> <ul> <li>7 Eier (große M), raum Temperatur</li> <li>180 g Zucker</li> <li>60 g Vollmilch</li> <li>80 g Honig</li> <li>200 g Weizenmehl type 550 oder 812 falls vorhanden, da der hohe Proteingehalt besser für den Konsistenz des Kuchens ist.</li> </ul> Anleitung: <br><br> 1. Den Ofen auf 175C vorheizen. <br> 2. Eier schlagen mit einem Mixer (eingestellt auf maximal der mittlere Stufe) für ca. 10 Minuten und der Zucker sollte in drei Teilen nach und nach hinzugefügt werden. <br> 3. Milch und Honig in einem separaten Schüssel erwärmen (nicht aufkochen!) <br> 4. Sieb das Mehl und stell zur Seite. <br> Ein Teil der Milchmischung in die Eiermischung addieren und langsam umrühren für paar Sekunden. <br>Addiere noch die Hälfte des Mehls in den Teig und nochmal langsam umrühren. Danach gieß den Rest der Milchmischung ein, gefolgt mit dem Rest des Mehls. <br>Rühre noch langsam den Teig mit dem Backschaufel um, bis er gleichmäßig inkorporiert ist! Ihr dürft aber nicht zu viel bzw. zu schnell umrühren, nur bis alle Zutaten gleichmäßig vermischt sind. <br> 5. Leg den 24cm *24cm Kuchenform mit Backpapier aus (vergiss nicht, 2-3 cm Papier über den Formrand zu lassen)! <br> Es soll dabei helfen, den Kuchen aus dem Form zu holen, ohne ihn kaputt zu machen. So macht ein viereckiger Form sicher einfacher 😊. <br> Ich habe hier einen runden Kuchenform mit 24cm Durchmesser verwendet. <br>Gieß den Teig langsam in die Mitte des Kuchenforms bis ungefähr 2/3 der Hohe ein! <br> Lass den Form aus ca 30cm Höhe auf den Tisch einmal fallen, oder steche den Teig mit einem Stäbchen in einer Zigzag-Bewegungen, in die horizontale- und vertikale Richtung! <br> Es dient dazu, die Luftblasen aus dem Teig raus zu lassen. Große Luftblasen sind die böse Feinde dieses Kuchens. <br> 6. Backe den Kuchen mit der Temperatur von 175 Grad in einem Wasserbad für 10 Minuten! <br>Danach sollte die Temperature auf 160 Grad reduziert werden. Der Kuchen wird noch ca 30-40 Minuten gebacken. <br> 7. Nimm den Kuchen aus dem Ofen und lass ihn sofort aus ca 15 cm Höhe aud den Tisch fallen, um die Luft aus dem Kuchen zu befreien. <br>So wird der Kuchen nicht schrumpfen. <br> Falls ihr noch seht, dass Falten langsam auf der Kuchenoberbläche entstehen, kipp die Kuchenform komplett um für mindestens 10 Sekunden! <br>Wenn ihr die Kuchenform wieder umdreht, sollte der Kuchen wieder glatt sein. <br> <br> Ihr könnt den Kuchen jetzt servieren oder verpackt mit einer Plastikfolie in den Kühlschrank übernacht stellen. <br>Der Kuchen kann bis zu einer Woche schön feucht und schmackhaft im Kühlschrank bleiben. <br> So wäre die traditionelle Methode. <br><br> Ich hab aber ein zweites Rezept, das genauso gut schmeckt und schrumpft nicht. <br>Ich habe dazu ein bisschen Cream of Tartar und zusätzliches Fett addiert. <br> <h3> Das zweite Rezept sieht dann so aus:</h3> <br>-5 Eigelb (große L) <br>-50g Zucker <br>-80g Rapsöl (Kokosöl oder flussige Butter geht auch) <br>-100ml Milch <br>-150g Weizenmehl Type 405. <br> (Noch idealer wäre, wenn das Mehl bereits mit etwa 18 g Speisestärke zuvor gleichmäßig vermischt und mindestens 2 Mal gesiebt worden ist. <br><br> Für die Meringue: <br>-5 Eiweiße <br>-70g feine Zucker <br>-½ TL cream of tartar (Weinstein Backpulver) <br><br> Die Methode ist relativ gleich, außer dass die Eigelbe und Eiweiße separat geschlagen werden. Wir müssen also eine Meringue aus den Eiweißen machen. <br> Wir schlagen die Eiweiße in einem Schüssel zusammen mit dem Cream of Tartar und fügen die Zucker nach und nach in drei Schritte hinzu. <br> Verwende den Mixer mit der mittleren Geschwindigkeit, da wir genau aufhören müssen, kurz bevor wir den höchsten Steifpunkt erreichen! <br> Es ist genügend, wenn der Schaum nicht mehr tropfen kann. Die Eigelbe werden zusammen mit dem Zucker manuell mit einem Schneebesen zusammen geschlagen und danach langsam mit der Milch und Fett gemischt. <br>Das Mehl wird gesiebt nach und nach in den Teig gleichmäßig vermischt. <br><br> Wir mischen danach den Teig mit dem Meringue und zwar wieder in drei Teilen mit einem Backschaufel. <br>Der Teig sollte gleichmäßig vermischt aber nicht zu viel umgerührt werden, lieber mit faltende Bewegung von außen nach innen. <br> Abgesehen von der Ofentemperatur ist der Rest genau gleich wie bereits oben beschrieben worden ist. <br> In diesem Fall wird der Kuchen zunächst im vorgeheizten Ofen mit 150 Grad für 30 Minuten gebacken und danach wird er noch 35 Minuten mit der Temperatur von 140 Grad weiter gebacken. <br> <br> Ok Freunde. Ich hoffe ihr habt Erfolg beim Nachbacken 😊. Es lohnt sich zu versuchen, der Kuchen schmeckt sehr fein. <br> Auf Wiedersehen! </td><td> Hello dear friends, as promised I will post the recipe for my daughter's birthday cake today. <br><br> <p> Some pictures are from the past, because I practiced a few times with different variations and in a smaller cake pan. <br>I would not want to bake a "failed" cake exactly on her birthday. You can see this in the picture that has not yet been decorated and small. <br> <br> The other cake, where you can see some crack on the surface, has not been baked with the traditional recipe or method. <br>The taste is just as good, it doesn't have the typical brown surface but it doesn't shrink at all. <br><br> Conclusion, it's very ideal from the consistency, bouncy, soft, but the crust is not satisfying. <br> I'll probably have to try baking it again for a little longer and setting the temperature a little higher to see if I could have the same crust as the traditional cake. <br> Apart from that, both taste super delicious. <br><br> So, I will write down both recipes here and you can just choose which one you like more. <br> <h3> Here is the first recipe. </h3> Ingredients: <br> <ul> <li>7 eggs (large M), room temperature</li> <li>180 g sugar</li> <li>60 g whole milk</li> <li>80 g honey</li> <li>200 g bread flour</li> </ul> Instructions: 1. Preheat the oven to 175C 2. Beat the eggs with a mixer (set to maximum medium setting) for about 10 minutes and the sugar should be added in three parts, one after the other 3. Heat milk and honey in a separate bowl (do not bring to the boil!), just till the honey dissolved in the milk 4. Sieve the flour and set aside Add a part of the milk mixture to the egg mixture and stir slowly for a few seconds. Add another half of the flour into the dough and stir slowly again. <br> Pour in the rest of the milk mixture, followed by the rest of the flour. Slowly stir the dough with the scoop until it is evenly incorporated. <br> You may not stir too much or too fast, only until all ingredients are evenly mixed. 5. Lay out the 24cm *24cm cake tin with baking paper (don't forget to leave 2-3 cm of paper over the edge of the tin). It should help to get the cake out of the mould without breaking it. So a square form surely makes it easier 😊. <br> I have used a round cake tin with a diameter of 24cm here. <br> Pour the dough slowly into the middle of the cake mould until it reaches about 2/3 of its height. <br> Drop the mould from about 30cm height onto the table once, or prick the dough with a stick/skewer in a zigzag movement, in the horizontal and vertical direction. It serves to let the air bubbles out of the dough. <br> Large air bubbles are the enemy of this cake. 6. Bake the cake at the temperature of 175 degrees in a water bath for 10 minutes, then reduce the temperature to 160 degrees. Bake the cake for another 30-40 minutes. 7. Take the cake out of the oven and drop it immediately onto the table from a height of about 15 cm to release the air from the cake. <br> This way the cake will not shrink. If you can still see that wrinkles are slowly forming on the surface of the cake, tip the cake pan over completely for at least 10 seconds. <br>When you turn the cake pan back over, the cake should be smooth again. <br> You can serve the cake now or put it wrapped in plastic foil in the refrigerator overnight. <br>The cake can stay moist and tasty in the fridge for up to a week. <br>This would be the traditional method. <br> But I have a second recipe that tastes just as good and does not shrink. I have added some Cream of Tartar and extra fat to the recipe. <h3>The 2nd recipe then looks like this:</h3> -5 egg yolks (large L) -50g sugar -80g rapeseed oil (coconut oil or melted butter also works) -100ml milk -150g cake flour <br>For the meringue: -5 egg whites -70g fine sugar -½ TL cream of tartar <br> The method is relatively similar, except that the yolks and whites are beaten separately. <br> So we have to make a meringue from the egg whites. We beat the egg whites in a bowl together with the Cream of Tartar and add the sugars graduall, each time 1/3 part. <br>Use the blender at medium speed, as we have to stop exactly before we reach the peak of stiffness. It's better to control that way. <br>It is enough when the foam can no longer drip. <br>Beat the egg yolks together with the sugar manually with a whisk and then slowly mix it with the milk and fat. The flour is sieved and gradually mixed into the dough. <br>We then mix the dough with the meringue, again in three parts with a spatula. The dough should be mixed evenly but not too much, just enough so that the dough evenly incorporated and silky smooth. Fold the dough from the outside to the inside of the bowl. <br> Apart from the oven temperature, the rest is exactly the same as described above. <br> In this case the cake is first baked in the preheated oven at 150 degrees for 30 minutes and then baked for another 35 minutes at the temperature of 140 degrees. <br><br>Ok friends, I hope you have success in baking 😊. Ich glaube, viele Frauen sind zurzeit plötzlich tolle Kochinen bzw Bäcker geworden. Andernfalls hätte ja keine Mehl- und Hefemängel im Markt gegeben 😁. Globus hat sogar extra ein Video von einer populäre YouTube-Kanalbsitzerin auf der Webseite hochgeladen, in der sie zeigt, wie man ein Hefe Wasser selbst ansetzt. Ich habe selbst inzwischen genauso gelernt, wie man einen Sauerteig ansetzt 😝. Was für ein toller Blog, bin ganz begeistert. Voralledem was mima2606 schon erwähnt hat und Du auch geschrieben hast. Das Du nichts den Zufall überlassen wolltest und den Kuchen vorweg auch schon getestet hast. (Backen) LOL nicht essen) Ja das zeigt Deine grosse Liebe und die Wichtigkeit des Tages wo Euer Schatz im Mittelpunkt steht. Gerade jetzt wo man ja nicht so feiern kann wie man möchte. Es macht mich ganz traurig wieviele Kinder im Moment Geburtstag haben und ganz tapfer damit umgehen obwohl sie es vom Alter nicht richtig verstehen können. Ja das ist im Moment mit das schlimmste für die Kinder. Und sie sind schon so vernünftig und lernen auch viel aber erklären kann man viel aber verstehen ist schwierig. Vielen Dank noch mal für die Anleitung, hab die Kasutera Torte nämlich geschmacklich sehr gut hinbekommen und habe dein Rezept auch schon weitergeleitet.🙂 Optisch war das Ergebnis in meinem Fall "ok", aber irgendwie sieht sie bei dir viel schöner aus, wahrscheinlich muss ich da einfach noch eine ganze Weile üben, bis ich dem Profi mal das Wasser reichen kann. :)

Wenn es nicht für einen besonderen Anlass ist, muss es auch nicht optisch schön sein. Hauptsache der Geschmack ist wunderbar 😂. Inzwischen gibt es in öst-asiatische Backereien viele Geschmackvariationen aber ich finde den traditionellen Honig-Kasutera ist immer noch am besten.

Die Kuchen sehen sehr appetittlich aus. Bei der Beschreibung kann nichts schief gehen wenn man die Rezepte ausprobiert. Der Obstkuchen auf dem vorletzten Bild ist so schön, daß man ihn garnicht anschneiden mag???
