I can’t believe I’ve had cast iron pans for so long without trying a dutch baby.  I’ve been seeing the recipes for years but never did it until a few days ago and I kind of feel stupid because they’re a bit next level as far as pancakes are concerned.  I thought I loved crepes until I tried one of these, so good that I was munching on the leftovers plain until I was a bit too full

Originally invented by the German, it’s a giant baked pancake made best in a cast iron frying pan.  It’s super tasty and arguably the easiest variation of pancakes I’ve come across

1 c flour
3 eggs
2/3 c milk
¼ t vanilla (optional, I ommitted it for a second “savory” dutch baby)
4 T butter, one melted for the batter, the rest for the pancakes

It’s simple.  Start by blending the milk and eggs until creamy.  Add the flour and vanilla, blend again.  Add the butter, blend one more time.  Then melt the rest of the butter into a cast iron pan.  Pour all the batter into the pan and bake it at 375 for about 20 minutes or until golden brown.  You can top this with   just about anything you come up with, or just powdered sugar.
