# Hallaca</center>

La *hallaca* o *hayaca* es un pastel o tamal típico de la temporada navideña en Venezuela. Consiste en una masa de harina de maíz sazonada con caldo de gallina o de pollo y pigmentada con onoto, un colorante y condimento conocido también en otros países como *achiote*, que se rellena con un guiso a base de carne de res, cerdo y gallina o pollo, al cual se le agregan aceitunas, uvas pasas, alcaparras, pimentón y cebolla, entre otros ingredientes que pueden variar de acuerdo a la región, para luego ser envuelta de forma rectangular en hojas de plátano, la cual es atada con pabilo y hervida en agua antes de servirla en la mesa.

Este plato forma parte del inconsciente venezolano, siendo el más extraordinario elemento integrador dentro de la diversidad, por cuanto permite unir a todos, sin distinción de raza, credo o filiación política, alrededor de su preparación. 

La palabra *hallaca* aparece en un diccionario escrito por fray **Domingo de Santo Tomás**, publicado en 1560 que expone su origen de la lengua quechua, y que la define como "pollo tierno de ave generalmente, antes que tenga plumas", sin embargo, algunos historiadores no coinciden con esta apreciación. En este sentido, desde hace mucho tiempo ha circulado en el imaginario venezolano, la creencia de que el término *hallaca* es la unión de las palabras "allá" y "acá" por la procedencia de sus ingredientes: los de "allá", aquellos que trajeron los conquistadores europeos que se asentaron en el continente americano durante la conquista, y los de "acá", los ingredientes autóctonos de la región.

Esta imagen la tomé en la víspera de la *Nochebuena*, hace un par de años. Posteriormente, la modifiqué haciendo uso de la aplicación **PicsArt**, empleando una superposición de filtros, comenzando con un filtro del tipo HDR (High Dynamic Range) con la finalidad de ampliar los tonos de la imagen original, y posteriormente un filtro sencillo de Blanco & Negro.</div>

The *hallaca* or *hayaca* is a cake or tamale typical of the Christmas season in Venezuela. It consists of a mass of cornmeal seasoned with chicken or chicken broth and pigmented with onoto, a dye and seasoning also known in other countries as *achiote*, which is filled with a stew based on beef, pork and hen or chicken, to which olives, raisins, capers, paprika and onions are added, among other ingredients that can vary according to the region, and then be wrapped rectangularly in banana leaves, which is tied with wick and boiled in water before serving it on the table.

This dish is part of the Venezuelan unconscious, being the most extraordinary integrating element within diversity, because it allows everyone to be united, regardless of race, creed or political affiliation, around their preparation.

The word *hallaca* appears in a dictionary written by Fray **Domingo de Santo Tomás**, published in 1560 that exposes its origin of the Quechua language, and which defines it as "tender chicken, usually before it has feathers" , however, some historians do not agree with this assessment. In this sense, the Venezuelan imaginary has been circulating for a long time, the belief that the term *hallaca* is the union of the words "there" (allá) and "here" (acá) because of the origin of its ingredients: those of "there" (allá), those brought by the European conquerors who settled on the American continent during the conquest, and those from "here" (acá), the native ingredients of the region.

I took this image on the eve of *Christmas*, a couple of years ago. Subsequently, I modified it using the **PicsArt** application, using a filter overlay, starting with an HDR (High Dynamic Range) type filter in order to expand the tones of the original image, and then a simple filter White & Black.</div>
