나물로도 먹는 비비추

열흘 전쯤 순천만국가정원에 갔을 때 꽃 사진을 많이 찍어 왔었다.

갈 때마다  찍어온 사진들 때문에 바탕화면에 사진폴더들이 늘어서 이제는 정리해야겠다 싶었는데 오늘 내게 선택을 받은 꽃은 비비추이다.

비비추는 전체적인 모양이나 꽃이 옥잠화와 아주 비슷해서 내 경우엔 꽃의 색깔로 구분한다.
옥잠화는 흰색의 꽃이 피는 반면, 비비추는 보라색의 꽃을 피운다.

어린잎은 나물로도 먹을 수 있는 유용한 식물이다.



+ 수선화님의 댓글을 보고 확실히 알아보고 싶어서 국립수목원으로 문의 해본 결과, 재래종 비비추는 당연히 나물로 식용이 가능하나 비비추의 품종이 500여 종이 넘는다고 하며 관상용비비추는 식용불가하다는 답변을 들었다.

***비비추*** 

• 분류:  아스파라거스목 > 용설란과 > 옥잠화속
• 학명:	Hosta longipes (Franch. & Sav.) Matsum.
• 꽃말: 좋은 소식. 신비로운 사람. 하늘이 내린 인연
• 원산지: 아시아 (중국, 대한민국, 일본)

숙근성 여러해살이풀로 관엽, 관화식물로 산지의 냇가에서 자라며 토양은 가리지 않는 편이나 비교적 부식질이 풍부한 사질양토에서 잘 자란다. 

잎이 모두 뿌리에서 돋아 비스듬히 퍼지며 잎은 난상 심장형 또는 타원상 달걀모양이고 진록색이 나며 가죽질이고 두꺼우며 끝이 뾰족하고 밑부분은 절저 또는 얕은 심장저이며 윤채가 없고 가장자리가 밋밋하지만 약간 굴곡지다.

꽃은 7-8월에 피고 꽃대는 길이 30-40cm로서 길이 4cm의 연한 자주색 꽃이 한쪽으로 치우쳐서 총상으로 달린다. 
꽃부리는 끝이 6개로 갈라져서 열편이 약간 뒤로 젖혀지고 6개의 수술과 1개의 암술이 길게 꽃 밖으로 나온다.

열매인 삭과는 비스듬히 서며 긴 타원형이고, 3개로 갈라진다. 

줄기는 잎과 따로 구분되진 않으며 실생 및 분주로 번식한다.

+ **이용방안**
∘밀원식물도 되며 잎은 식용한다. 
∘정원의 화단이나 암석정원의 바위틈 공원 등지에 조경용으로 식재하면 좋다. 
∘직사광선에서는 잎끝이 여름에 마르나 반음지의 지피식물로 적합하다. 
∘花(화)는 紫玉簪(자옥잠), 根莖(근경)은 紫玉簪根(자옥잠근), 葉(엽)은 紫玉簪葉(자옥잠엽)이라 하며, 약용한다. 

재배채소처럼 연하고 향긋하며 매끄러우면서도 감칠맛이 나는 산나물이다. 
산나물의 쓴맛이나 떫은 맛, 억센 섬유질 등의 단점이 되는 특성이 하나도 없다.

나물로 먹는 잎이 많은데 우리가 다 알 지를 못해서 안타깝죠.
단독주택이면 마당 가에 비비추 심어도 참 예쁠 것 같아요~^^

몇 년 전에 '야생초편지' (*황대권 著) 라는 책을 봤는데 정말 어지간한 풀은 다 먹더군요~
어렸을 때 엄마가 해주신 비비추나물 먹어본 것 같아요~
요즘은 나물하면 모두 마트에서 사먹는 걸로 알지만 말이죠~^^

비비추 길가에 관상용으로 많이 심지요. 
저는 강원도 시골 살때 어머니와 비비추 나물을 채취해서 국을 끌여먹곤 했지요. 
그때는 어머님이 끌여주신 된장국이 너무 맜이 있었습니다. 
그래서 저 비비추가 먹는 건지 확인해 보니 몾먹는 비비추 맞습니다. 
제가 시골에서 채취한 비비추는 커도 연하고 부드러운데 관상용 비비추는
어려서도 억세요. 몾먹는 비비추 맞습니다.

수선화님 댓글보고 확실히 알고 싶어서 국립수목원으로 전화를 했네요 ㅎㅎㅎ
수선화님 말씀처럼 재래종 비비추는 식용가능한데 관상용은 먹지 않는다고 하네요.
아울러 비비추 종류가 500여 품종이 있다고 합니다.

모든 풀들이 똑같은 종이 많아요. 
똑같으면서도 조금씩 달라요. 
제가 산에 가는걸 좋아해서 어머니 따라가면 비슷해서 못먹는 나물 캐면. 
어머니께서 생김을 설멸해 주시며 가르쳐 주셔서 그때 배운대로 지금도. 
어머니께 배운거 아니면 먹지도 캐지도 않습니다. ~~~^^
