Fondue chinese came into fashion in the 1970

### The Chinese fondue came to Switzerland much later. The exact time is difficult to determine. According to several veteran butchers must have been in the 1970s, says Philipp Sax: "It was a creeping integration of this menu." The Chinese court was adapted to Swiss conditions.

Why the dish is called "fondue" (French: melted), although nothing is melted, is not clear. Philipp Sax knows two assumptions: Firstly, the name could come from the fact that at the Chinoise similar dishes and cutlery used as the cheese fondue.

On the other hand, the name could come from Fondue Bourguignonne, where pieces of meat are dipped in boiling hot oil or fat. For this the fat had to be melted first.

### Sociability as a recipe for success
Incidentally, chinoise pans once looked different than today: "The first fondue chinoise pots looked like Gugelhopf shapes with a chimney in the middle," says Philipp Sax from the meat trade association. His success as a Christmas menu is due to the simplicity of the Fondue Chinoise.

### No one has to stand for hours in the kitchen, everyone is there while eating and can spend hours comfortably dunk and chop meat and vegetables.

So that the Chinoise evening remains comfortable even after eating and does not end with abdominal cramps or diarrhea, the following hygiene rules should be observed especially with chicken meat: Always cook separate plates for raw and cooked meat and chicken meat. It is even safer to serve guests with poultry and other meats on separate plates.
