Cherry Chocolate Cheesecake

INGREDIENTS:


Crust:
1 cup pitted dates, soaked and drained
1 cup raw almonds
¼ cup cacao powder
¼ cup pitted cherries

Chocolate Cheesecake Layer:
2 cups raw cashews, soaked and drained
¼ cup + 3 Tbsp. cacao powder
¼ cup + 2 Tbsp. coconut oil, melted
⅔ cup maple syrup
3 tsp. vanilla extract
1 Tbsp. coconut butter, melted
2 Tbsp. water
¼ tsp. salt

Cherry Cheesecake Layer:
1 ¼ cup raw cashews, soaked and drained
1 cup pitted cherries
¼ cup + 1 Tbsp. maple syrup
3 Tbsp. coconut oil, melted
3 Tbsp. fresh squeezed lemon juice
1 tsp. vanilla extract
2 Tbsp. Miracle Reds superfood powder
1 Tbsp. water
⅛ tsp. salt

Toppings:
Fresh cherries
Dark chocolate
Pistachios
Mint leaves


DIRECTIONS: 


For the Crust: 

1.Absorb dates warm water to diminish for around 30 minutes. 

2.Place almonds in a sustenance processor and process into a feast. 

3.Include the cacao powder and heartbeat together. 

4.Include the dates, in the wake of splashing and depleting, and fruits and mix until the point that a sticky mixture shapes. 

5.Press blend into base of lined, 9-in spring structure dish and put aside. 

For the Chocolate Layer: 

6.Absorb cashews warm water for 4-6 hours. Deplete and place in nourishment processor with coconut oil, maple syrup and vanilla concentrate. Mix until smooth. 

7.Include cacao powder, coconut spread and salt to the blend and mix until smooth. 

8.Gradually include water and mix until the point when blend achieves velvety consistency. Spread the chocolate blend over the outside and put in the cooler to set while making the cherry layer, around 15-20 minutes. 

For the Cherry Layer: 

9.Absorb cashews warm water for 4-6 hours. Deplete and place in nourishment processor with coconut oil, maple syrup, lemon juice and vanilla concentrate. Mix until smooth. 

10.Mix fruits independently then add to the cashew blend and mix together. 

11.Gradually include Miracle Reds superfood powder and salt until the point that blend achieves wanted shading and flavor. 

12.Gradually include water and mix until the point when blend achieves rich consistency. 

13.Pour the cherry filling over the set chocolate layer. 

14.Cover and place in the cooler to set for 4-6 hours, or overnight for best outcomes.
