STORING THE SUNCHOKES FOR WINTER

## <center>We've harvested, and now it's time to store them!</center>

After finally growing some Sunchokes (AKA Jerusalem Artichokes) for the first time ever, we had to store our harvest.

I chose to filly up five gallon buckets with soil and layer our harvest in between soil layers. Then, I stored the buckets beneath our mobile home. I am hoping that this sort of "natural refrigerator" will be just what they need to make it through the winter, or at least to keep until we eat them.

I think you can even make a makeshift root cellar with a buried bucket with a couple straw bales on top. But under a trailer house is a good idea too. I remember them always being cool underneath, even in Texas summers. Cool microclimates where we used to chase the biggest toads ever.
