A sweet temptation/Holunder (Sambucus)💮

***Today I would like to introduce you to a little treat with elderflower. Baked umbels, also called Hollerküchlein, are a tasty dessert and will delight not only you, but also your guests.***

***The elderberry is wonderful because it is so diverse! Its flowers, which now smell so wonderful, can be used culinary. But also dried and used as tea, it helps with colds and fever! And in autumn, the dark purple berries strengthen us and help us to prepare our immune system for the winter.***

***Who has a Hollerstaude in the garden, spares the trip into the wilderness. The Hollerdolden should be pretty big and free of withered flowers. I advise against washing the umbels, because the tiny beetles are not removed anyway, but because of this, much taste is lost; better accurately inspect the flowers before processing.***

#### Ingredients

* 4-5 large elderflower
* 1/8 tsp salt
* 2 tsp birch sugar
* about 130 ml almond milk
* 80 g of flour
* Oil for baking
* Birch sugar for dusting

#### Preparation

***For the dough, add salt, sugar, flour and almond milk in a deep plate with a whisk to a thick dough.***

***Free the elderflower from small beetles (do not wash), hold on a stick and pull through the dough.***

***Heat the oil in a pan and bake the dough-coated umbels in golden yellow. It should be so much fat in the pan that the flowers are deep-fried or at least approximately deep-fried.***

***Drain the baked elderflower on a paper towel and sprinkle with birch sugar and serve immediately.***

Again something very tasty from @proanima. 🙂
In Romania we have a beverage made from elderflowers, it is called "socata". The ingredients are: elderflowers, lemons, sugar (or a substitute), yeast and water. All these are being mixed in a big jar and left in a sunny place for a couple of days. The result is more than delicious, not to mention, very healthy. It should be kept in the fridge, otherwise it will turn into an alcoholic beverage (which gives horrible headaches).

In autumn, I cook the elderberries with plums and some water, then it is thickened with custard powder, also tastes very delicious 😋
