Beef Noodle Soup ~ Paleo Style

<p>Typically, noodles and a Paleo eating lifestyle are descriptors that don't fit together. It's an oxymoron. If you know anything about Paleo eating, you'll know that there are no food items, on the table, that contain grain. Most noodles are made with wheat flour of some description, pasta is also typically made this way.</p>
<p>In fact, many commercially prepared "gluten-free" products are made with starches, like cornstarch, tapioca starch or potato starch. Starches are not encouraged because they rapidly convert to sugar and generally anyone eating Paleo is doing their best to consume the least amount of refined sugar that they can.</p>
<p>I have found a good noodle alternative that is made with 100% mung beans and water.&nbsp;</p>

<p>Let me be clear here, they still contain carbs. Approximately 70 grams of carbs per serving portion.</p>
<p>Every once in a while, I will indulge by using them in a soup. They would also work really well in any Thai recipe that calls for glass noodles.</p>
<p>Two days ago, I made a roast of beef in my crock pot. The beef cooked slowly for about 6 hours and when it was finished, I drained the juice from the crock pot that was left over from the cooking process. I let this fluid cool in the refrigerator and then, I strained the fat that had solidified in a thin layer on top. This, very flavourful broth, became the base for my beef noodle soup.&nbsp;</p>

<p>Here it is, now in a very large stainless steel pot on my stove. There was about 1.5 litres of beef juice that I was able to save from my crock pot and I added another 1.5 litres of water to it, because it was exceptionally concentrated.</p>
<p>The <strong>tools </strong>needed are:</p>
<ol>
  <li>a large pot that will hold 6 litres or more of liquid;</li>
  <li>a ladle;</li>
  <li>a chopping knife;</li>
  <li>a food processor (for slicing the radishes);</li>
  <li>and a big wooden spoon.</li>
</ol>

<p>The spoon needs to be "big" so that you can stir a lot of vegetables in a lot of liquid that's very hot. If your spoon is big enough, it will get the job done without insult or injury to you.</p>
<p>The <em><strong>ingredients</strong></em> needed:</p>
<ol>
  <li>1.5 litres of water</li>
  <li>1.5 litres of beef juice (The remnants left over in a roasting pan or crock pot after a beef roast has been cooked.)&nbsp;</li>
  <li>3 stalks of celery chopped into small cubes</li>
  <li>1/2 cup of parsley chopped&nbsp;</li>
  <li>2 lbs of radishes sliced</li>
  <li>1/2 lb of portobello mushrooms sliced and grilled</li>
  <li>2 small onions sliced and grilled</li>
  <li>1 large sweet potato cubed</li>
  <li>1 cup of chopped roast beef chunks</li>
  <li>and 1 nest of mung bean noodles per person (This recipe serves 4 people.)&nbsp;</li>
</ol>
<p><em><strong>Directions:</strong></em></p>
<ul>
  <li>Put the beef juice and water in the pot and set to medium heat on the stove top.</li>
</ul>

  <li>Add chopped celery.</li>

  <li>Add chopped sweet potato.</li>

  <li>Add the sliced radishes.</li>

<p>Radishes lose their heat when they are cooked. They are an excellent replacement for white potatoes.</p>
<ul>
  <li>Next, add the grilled mushrooms.</li>

  <li>Add the grilled onions.</li>

  <li>Add the chopped parsley and simmer on low heat for 3 hours.</li>
</ul>

<p>Stir the pot really well to make sure all the ingredients are well blended.</p>

  <li>After the soup has simmered for 3 hours, place 1 mung bean noodle nest in a large bowl.</li>
</ul>

  <li>Ladle hot soup over top of the nest, add chunks of roast beef and let sit for 2 minutes before serving. This will give the mung bean noodles a chance to cook and soften. It doesn't take much and if you cook the noodles in the pot while the soup is cooking, they will turn to mush.</li>

<p>This is a hearty soup and it's hard to know whether you'll need a fork or a spoon to eat it. I usually use both.</p>

Another crazy good recipe by you.  Your stuff is so well thought out.   

I did not know this when you said

I made my first ever stew on my own last month!!  Many things here are similar to what you used and did!    I was eating a bowl of it when I watched your video tonite!!!!!  

I have a file going that I started last week I told you, for your recipes now, I save them in my Drafts folder and just add to them and they are labelled with your name lol

Much easier than searching on here for stuff.   You are awesome!  1 of the best Steemers on here!
