I learnt it from one of my neighbors long back and it has been my favourite ever since. Although the name sounds fancy it’s less known among the people. Bitter gourd is a good source of thiamin,vitamin B-6,iron and a very good source of dietary fibre, vitamin A,vitamin C,folate and zinc. Now I know that many of you do not like bitter gourd. But if prepared right you won’t even know the bitterness as this dish is rich in flavours. Bitter Gourd Kismuri Course Side Dish Cuisine Indian Prep Time 1 hour Cook Time 25 minutes Servings 4 INGREDIENTS 2-3 Bitter gourd Medium sized 2 Onion Finely chopped 4 Green Chilly Finely chopped 1/2 spoon Mustard Seeds 6 Red Chilly 1 spoon Urad Dal 1/4 Coconut grated 1 spoon Coriander seeds Tamarind small lemon sized 1/4 spoon Turmeric powder 7-8 spoon Ghee 5-6 Curry Leaves Salt for taste INSTRUCTIONS Slit the bitter gourd lengthwise and remove the seeds. Cut them into small pieces and soak it in salt water for 1 hour. This will remove the bitterness. After an hour squeeze the pieces well and removed them from salt water. In a kadai add 4 spoon of ghee and fry the bitter gourd pieces in a low flame till they become golden brown.once done remove it from the kadai and keep it aside. ![](https://steemitimages.com/DQmNfrP3RP6zorhVbXKYMxT1PZcKY8hUJ9vS3zLazknogZF/image.png) Take 2 spoon of ghee in the same kadai. Add 1/2 spoon of mustard seeds and allow it to splutter. Then add 1 red chilly and 1 spoon of urad dal and fry till it becomes golden brown. Add chopped onions and green chillies and fry till onions become golden brown.
