SteemFoods: Fish Escabeche || Cebuano Style Sweet & Sour Fish
Hello Steemit foodie friends!!! How are you all today? I hope you have a great Thursday. Greetings from the Philippines ๐Ÿ‡ต๐Ÿ‡ญ

For today, I will be sharing another favorite recipe at home. We always love cooking fish and we are just very blessed because we live in a place where fishing is one of the means of livelihood. My husband @hulyootso also loves spearfishing together with my brother, especially at night. He said that it's way easier to catch fish at night than at daylight. And I thought, maybe fishes are easier to catch at night because they're sleeping lol ๐Ÿ˜‚

So, I have these fresh *molmol* or parrot fish for my recipe today. It is called: **Fish Escabeche** or the Cebuano Style of preparing Sweet and Sour Fish. Let's get started!

The ingredients I used for this dish are the following:
5 pieces medium-sized molmol or parrot fish
3 cloves of garlic, chopped
1 piece onion, chopped
Thumb-size ginger, julienned
1 piece carrot, julienned
1 piece red bell pepper, julienned
Oil for frying
2 tablespoons oyster sauce
3 tablespoons soy sauce
1/2 cup water
1 pouch pineapple tidbits
1 tablespoon tomato sauce
1 tablespoon brown sugar
Salt
Slurry (1 tablespoon of cornstarch dissolved in a quarter cup of water)

**THE COOKING PROCESS**

First, clean the fish by removing its scales and entrails. Wash the fish and drain in a colander. Add salt to the fish and cook by pan-frying it.

Second, chop the garlic and onion. Slice the ginger, carrots and red bell pepper into julienne strips.

Third, in a pan, sautรฉ the garlic, onion and ginger. Add in the carrots and bell pepper.

Then, add oyster sauce and soy sauce to the vegetables. Keep sautรฉing until everything is mixed well.

Add half cup of water. Let it simmer for a minute or two.

Add in pineapple tidbits with the juice. This will give our dish its tropical, sweet flavor.

Then, add a tablespoon of tomato sauce and brown sugar. Season with some salt depending on your preference. Let it simmer for two minutes.

Prepare a slurry. It's a mixture of at least a tablespoon of cornstarch dissolved in a quarter cup of water. This will help thicken our sauce. Pour this last to our sweet and sour sauce.

Once the sauce slightly thickens, you can already add your fried fish. Let the fish absorb the flavor of the sweet and sour goodness of the sauce. Let it simmer for one minute and we're done!
