Curious How a Brick and Mortar Bitcoin Exchange Handles Inventory?

Does anyone know the answer to this as I'm curious?

So recently I was reading an article about how a lot of physical or brick and mortar Bitcoin stores are popping up in Korea to sell Bitcoins to non tech saavy individuals who can walk in and pay in cash.

I also saw a [Reddit post](https://www.reddit.com/r/Bitcoin/comments/25drsx/bitspot_a_brick_mortar_bitcoin_exchange/) recently about a small company out of Kentucky doing this very thing.

You can't buy Bitcoins in the morning and sell them hours later with the price swinging and count on making money even with a large service charge. The only thing I can imagine is they have a working stock of Bitcoin, when a customer purchases say 0.1 Bitcoin they immediately place a corresponding buy on an exchange to replenish at the same price they sold at.

Anyone know how a business like this would operate and handle inventory?
