There was an Irishman, an Australian, and an American sitting in a bar one day. The American was going on about how easy and great a new bread recipe was. The Australian man mumbled the word **'Damper'**.

The American explained that the bread wasn't damp. It had turned out so well there was not even a photo of its existence. It was that good!

Louder mumbling could be heard. Clicking too! All of a sudden the Americans Discord beeped. Checking her Discord Messages she clicked on a link to a recipe for *something* called **'Damper'**.

Reading the first ingredient, self-rising flour,  in the new recipe the American said she didn't have any. All she had was normal white flour. The Irishman then spoke up and explained to make self-rising flour you just add a teaspoon of baking soda per cup of flour. From here there was a discussion about what really **is** a teaspoon in measurement. The jury is still out on that discussion.

Once knowing how to make self-rising flour there was the small problem of the recipe's measurements in Grams and Milliliters. The Irishman, the Australian and the American came to the decision that 250 g equaled two cups. From here a discussion was had about what size really **is** a cup. The jury is still out on that discussion also.

After all was said and done, the American went off to take a nap.

Fast forward a few days. By some strange twist of fate, the American was awake at 6:45 AM this Tuesday morning. She was hungry. She had not felt well but also had missed talking to her friends. She called her Australian friend and played a bit of *catch-up* on what was going on in their life.

Soon hunger got the best of the American and she clicked on the **'Damper'** recipe. Not really awake she asked the Australian for help converting the recipe to US measurements.

was the running theme to the conversation as the **NOT AWAKE** American made her first batch of **'Damper'**.

As you can see the **Damper** looked great! It tasted great too...yet.. To the Americans mind *something* was a bit 'not quite right' about how it turned out. This nagging thought stuck with her all day and night. When her house was quiet, the American looked at the recipe again. 

Googling ensued. Many 'Ahhh Haaa' moments were had. 

Below is the Easy Damper Recipe in grams and US measurements. It was well worth making it a second time. Your tummy will thank you!

# Damper

**Ingredients**

* 250 g self-raising flour (2 Cups) **See below to make your own self rising flour if you don't have any on hand.*
* 1/2 tsp salt
* 25 g unsalted butter chilled cubed (2 1/2 Tablespoons)
* 175 ml of Milk, Beer or Water (3/4 Cup)
* Optional(s): 2 handfuls of any kind of cheese, chives, tinned corned beef, sundried tomatoes, spinach... You get the idea!

Mix the flour with the salt in a large bowl. Add the butter and rub it into the flour with the tips of your fingers, until it resembles fine crumbs.

Add any extra ingredients, like cheese and spices, you want.

Stir in the milk with a  butter knife to make a soft, but not sticky dough.

Turn out onto a lightly floured counter and shape into a soft, smooth ball.

Set the ball of dough on the baking sheet and flatten gently to make a circle 17cm (7 inches) across. Cut a deep cross in the dough and brush lightly with milk.

Bake at 190C (375 F) for 30 minutes until golden.

Serve warm or at room temperature.

**How to make self-raising flour**

>* Combine 1 cup of plain flour and 2 teaspoons of baking powder in a glass bowl and mix.
>* Place a sheet of wax paper on the table. Pour mixture into a mesh strainer and sift over the paper, holding the handle of the strainer with one hand and tapping with the other.
>* Collect the flour that has fallen into the paper and carefully transfer back into a mixing bowl for immediate use or an airtight container for storage.

What does this all have to do with Steem and Discord? If not for Steem I never would have met @thehive or @jackmiller. If not for Discord I never would have had the fun of listening to two men try and tell me how to make self-rising flour, what a teaspoon is or how big a cup really is! 

Life doesn't get any better than that!
