Tomato is rich in lycopene and olive oil in oleuropein, molecules widely researched as antioxidants. Eating tomato with olive oil enhances the anticancer properties of both, which are closely linked to fighting body inflation, a process that generates various diseases.
Extending this information a little, a recent study on the properties that certain vegetables offer against colon cancer and carried out by researchers from the University of Almería, in Spain, showed that tomato, in this sense, is very nutritious.
In addition to the results obtained with the tomato, the team of researchers also verified that the antioxidant properties of this fruit when they work together with those of olive oil are enhanced. If each one acts against cancer cells, together they work even better, especially against colon cancer.
This research thus becomes clear evidence that the classic Mediterranean diet is full of basic foods full of health benefits
