# White rice with chicken and vegetables

## INGREDIENTS to make a white rice with chicken and vegetables for 4 people:

*    400g of round rice
*    2 cloves of garlic
*    1 red pepper
*    1 green pepper
*    1 medium onion
*    2 carrots
*    2 chicken breasts
*    2 tomatoes
*    1 teaspoon dried rosemary
*    1 teaspoon dried thyme
*    olive oil
*    Salt and pepper

## Preparation

1.- In a frying pan, put a small splash of oil to heat over a low heat. When hot, add the chopped garlic cloves and let them cook a couple of minutes, enough time to flavored the oil. Let the garlic, do not take color

2.- After the time, add the onion, carrot and red pepper, all cut into squares of approximately the same size. Season and let cook for 5 minutes, while stirring frequently, always on a gentle heat

3.- After the first 5 minutes, add the green pepper, also cut into cubes. The green pepper requires less cooking time, so we add it later. We let cook all 5 minutes more

4.- While the vegetables are cooking, we cook the rice. We put twice the amount of water that rice in another casserole. We boil and add a good pinch of salt. When it boils, add the rice and let it cook for 20 minutes, until it is al dente

5.- When the cooking of the vegetables is already more advanced, add the tomatoes, peeled and cut into pieces. We also add the dried thyme and rosemary and incorporate with the rest of the ingredients. We let cook another 5 minutes, more or less

6.- When everything is cooked, in a smaller frying pan and over a high heat, put the chicken breasts cut into bite size cubes. We are going to seal them, in such a way that they take color on the outside but on the inside they remain raw.

7.- Done this, we add the breasts next to the vegetable, which will already be cooked. we mix everything and let it cook three or four more minutes, until the chicken cooks completely

8.- We serve. To do this on a plate, we put a rice base. We make a hole in the middle and over that hole, we put the mixture of vegetables and chicken. We serve immediately.
