苏式鲜肉月饼

劳工节的最后一天,做了一些月饼送人。从小到大,我最喜欢的就是苏式的鲜肉月饼。所以做月饼,我也只会做苏式月饼。下厨房的方子有很多,我这个方子是一个点心师傅教的。做出来的口感很好,感觉和市售的不相上下。做法也比较简单,从准备馅料到全部烤制完成大概用了4个小时左右的时间。

做法:

<h1>A 馅料</h1>

一般来说,苏式月饼的内馅都是鲜肉。但是由于我家的两位成员都喜欢吃甜的。所以这次,除了鲜肉,我还准备了豆沙,奶黄两种馅心。我一般喜欢做个头小一点的月饼,馅心的量控制在25-30g左右,所以大家在包月饼前要根据包的量来制作馅料。

<strong>馅料1 豆沙</strong>

往年豆沙都是自己做的,每次炒豆沙手都快断了。今年果断买成品。不过这种豆沙,回家还是需要再炒一下,感觉还是太湿。成品的缺点是比较甜一点。

<strong>馅料2 奶黄</strong> 
奶黄需要注意的是,和做包子的馅不同,月饼需要炒干一点。我个人觉得奶黄馅的口感有点单调,就在里面包了一颗栗子。感觉口感层次更加丰富。

<strong>馅料3 鲜肉</strong>
苏式的鲜肉月饼口味偏甜,馅心里往往加一些榨菜来丰富口感。我这个方子做出来比较适合甜口的同学,仅供参考。不喜欢那么甜的适量调整。肉馅的比例最好是三分油七分瘦。鲜肉月饼的肉馅,不需要打水。馅里还有太多的水分,容易在烤制的时候,流出来,影响外皮的美观和口感。
方子:猪肉馅 500g,榨菜末 100g,老抽15g,盐8g,糖15g,蚝油 10g,葱姜末,麻油,白胡椒粉少许。
搅拌均匀后,放到冰箱里冷藏一会。

<h1>B 皮</h1>

油面:面粉300g,猪油65g, 麦芽糖 20g,盐少许,开水170g
油酥:面粉200g, 猪油100g
面粉,我喜欢用costco的all purpose。话说我做面条,饺子,面包,蛋糕都用它。一包在手,各种无忧。

麦芽糖,大华999有卖,大概1刀多一盒。加入麦芽糖,一是为了上色,二是为了让皮有脆度。

<li>面粉过筛,各自称好。在油面那堆里,中间挖个坑(话说我这坑挖的不太明显),里面放麦芽糖和猪油。

<li><p>油面的坑中间,加入开水,融化一下猪油和麦芽糖。然后用筷子先搅拌均匀,等不烫手以后合成面团。油酥则用掌心的温度来搓成一团。</p></li>

<li>油面油酥,分别分成18g和10g的大小。方子的量可以制作30个中等大小的月饼。分别用保鲜膜盖好,免得流失水分。</li>

<li>小包酥的方法。取一个油面一个油酥,把油面擀成圆形,油酥放在里面,包起来。压扁擀成牛舍状,然后从下网上卷起来。全部卷好,过程中,也是需要用保鲜膜包裹起来。然后取一个卷,压扁,两边向内折,擀成圆形。月饼皮就做好了。</li>

<li>包以及烤制。我一般差不多皮28g,馅心25-30g。这样包出来个头中等大小,大小可以根据个人喜好进行调整好。烤的话,200摄氏度,一面10分钟上色后,翻面再10分钟就可以了。每个烤箱不同,建议自行调整。</li>

这次做的比较匆忙,做完就直接打包去做客啦。所以没有摆盘好好拍照。就用以前的照片来展示一下成品。

这个是猪油的版本,其实素油(也就是炒菜的油)也可以制作月饼,其实月饼用炒菜的油也是可以制作的(请使用没有味道的油,比如玉米油,千万不要橄榄油哦)。以前读书的时候,我就是每年用素油来操作。当然,对环境熟悉后,用黄油、猪油都试过。我的感觉是,素油做出来的酥层口感相对比较硬质,更加的香脆一点。而猪油的则是更加的酥和薄脆。
