***Whole Wheat Apple Cinnamon Crunch Banana Oatmeal Muffin***
***Wet Ingredients:***
▪ 2 large eggs
▪ 2 large mashed bananas (1 cup)
▪ 3/4 cup sugar
▪ 1/3 cup oil
▪ 2/3 cup plain Greek yogurt
***Dry Ingredients:***
▪ 2 cups whole wheat flour
▪ 2 teaspoons cinnamon
▪ 1.5 teaspoon baking powder
▪ 1 teaspoon baking soda
▪ 1/4 teaspoon salt
▪ 2 package instant Apple Cinnamon Oatmeal ( I use Trader Joe’s)
***For the Crumb Toping:***
▪ 1/2 cup whole wheat flour
▪ 1/2 cup brown sugar
▪ 1 teaspoon cinnamon
▪ 1 package instant Apple Cinnamon Oatmeal
***Instructions:***
▪ Heat the oven to 350 degrees.
▪ Whisk together all Wet ingredients in a large bowl. Then add and mix in all Dry ingredients until incorporated.
▪ For Crumb topping, mix flour, brown sugar, cinnamon, and instant oatmeal until crumbs form.
▪ Place 1/4 cup ( I use ice cream scoop ) of batter in each lined or sprayed muffin cup and evenly sprinkle top with the crump topping."
