After all these years I now know why my mother put her Christmas cake in the linen cupboard!

I can still see my mother getting her Christmas cake out of the linen cupboard and thought it was strange. I wondered but funnily enough I never asked, always forgotten as slices would be devoured over a cup of Bushels tea as we sat at the little round table.

But, now I know all these years later and I am feeling immensely satisfied, it feels good. I am such a nog because anyone with an ounce of common sense would know that the linen cupboard is the cool dark place for a cake mixture of fruit, nuts and Grand Mariner for ten days.

Because it is so hot at Christmas time in Queensland my cake mixture always went into the fridge. But, not this year!

Lots of really good things are in this cake mixture, sultanas, raisins, currents, almond flakes, prunes, dates, place pineapple, apricots, fresh orange juice, peel ..........

I blinked a few times as I put the the bowl on the floor in my linen cupboard, I am certain that I saw the light bulb flashing like an eon light. It had to be my mother, she had the best sense of humour. Anyway, in the bowl went, sealed with a plastic lid. Today is the tenth day and the cake mixture smells delicious.

It is time for baking in a slow over for 3 1/2 hours. Then back into the linen cupboard for a week for the sprinkling of Grand Mariner over the top a few times. My gosh is this cake going to be yummy.

The last step is Ben putting the fondant over the cake. He is the resident expert with icing and decorating cakes so I am going to watch him in action and drink cups of Bushels tea remembering the chats with my mother at the round kitchen table.

I love to cook, but it has become more difficult. I wish I could afford to remodel my kitchen to make it accessible for me. Lower countertops, at least, would be great.

 I’ve had these moments too, Angie. Our mother’s memories flash back to us at times like this when we see ourselves doing the same things.

I am yet to find out janton.  I hope it will, cooking is the key, a slow oven is the best but it can come out too dry if the cake is in for too long.  And what a waste if that happens, lol
