El árbol de cacao, mejor conocido como cacaotero cuyo nombre científico es *Theobroma cacao L*, es una especie frutal que en la antigüedad se veneró en culturas como la sumeria, egipcia, romana y otras de occidente; nuestros aborígenes mesoamericanos también rindieron culto a la planta y procesaron sus semillas para reservar el producto exclusivamente a jerarcas y sacerdotes. En este sentido histórico, el cacao ha tenido un valor cultural, religioso y gastronómico interesante. Venezuela posee buena genética del *Theobroma cacao L*, a nivel mundial es reconocido el nivel de calidad del grano y su demanda va en aumento.

> The cocoa tree, better known as cacao tree whose scientific name is *Theobroma cacao L*, is a fruit species that in antiquity was worshipped in cultures such as the Sumerian, Egyptian, Roman and others in the West; our Mesoamerican natives also worshipped the plant and processed its seeds to reserve the product exclusively for hierarchs and priests. In this historical sense, cocoa has had an interesting cultural, religious and gastronomic value. Venezuela has good genetics of *Theobroma cacao L*, worldwide the quality level of the bean is recognized and its demand is increasing.

El procesamiento de las semillas de cacao en la antigüedad se limitaron a su preparación como bebida fermentada y caliente, siendo a partir del proceso de colonización que se empezó a mezclar con edulcorante natural y se descubrió el chocolate; el cual es la mezcla de semillas molidas con textura pastosa y edulcorante natural o azúcar en la actualidad, con estos dos ingredientes ya se obtiene el chocolate. Ahora bien, hay varios tipos de chocolates; de hecho, la pasta suave que se obtiene de triturar completamente las semillas del fruto de cacao, es chocolate al 100% de pureza, llamado comercialmente chocolate oscuro, amargo, negro o puro.

La sola apariencia del chocolate ocasiona la segregación de endorfinas y de manera voluntaria o involuntaria se manifiesta un estado de felicidad. Es imposible estar molesta ante un helado tan sabroso.

Es precisamente con este tipo de cobertura de chocolate que se elaboran estos deliciosos helados y postres, ya que su concentración y pureza permite un procesamiento adecuado, puesto que se le agregan ingredientes como leche, azúcar, vainilla y la mantequilla de cacao, también llamada manteca de cacao. Esta se obtiene al prensar la masa de las semillas, ya que está compuesto por un 50 % de grasas. La industria de heladería, repostería, cosméticos, gastronomía y otros, generalmente la emplean para manufacturar sus productos.

Las propiedades nutricionales y minerales de la fibra y grasa del cacao son diversas e importantes para el organismo, entre ellas resalta los hidratos de carbono que proporcionan azúcares, grasas, vitaminas, calcio, flavonoides esenciales para el sistema cerebral y regulación cardiovascular, entre otros. El chocolate en su punto óptimo concentra gran cantidad de sustancias bioquímicas llamada feniletilamina, las cuales se les atribuye los estados sensoriales de bienestar cuando se es atraído por otra persona; mejor dicho, cuando nos sentimos enamorados. Por tanto, muchos lo consideran una sustancia afrodisíaca.

Therefore, many consider it an aphrodisiac substance.

Por si fuera poco, cuando el chocolate ha sido elaborado con semillas lo suficientemente fermentadas y con el nivel de humedad adecuada liberan teobromina, una sustancia estimulante del sistema nervioso central y con efectivos resultados para mantener relajados los músculos branquiales para garantizar una efectiva descongestión de vías respiratorias. Por estas y muchas razones, me encanta el chocolate y continuaré comiendo chocolate mientras exista en esta maravillosa esfera terrestre.

> On top of that, when the chocolate has been made with sufficiently fermented seeds and with the right level of humidity they release theobromine, a substance that stimulates the central nervous system and has effective results in keeping the gill muscles relaxed to ensure effective decongestion of the airways.
