## **Good morning everyone!**
Today I am giving you a **great gift**. It's one of my greatest passions, I sincerely hope that it's also one of yours.

I share with you this extraordinary **Neapolitan Pizza** that I ate some time ago at Pizzeria Angillotti in Casalnuovo, in the province of Naples.
There is very little to say...the photo speaks for itself. 😋
The pizza in the picture is dressed with **basil pesto**, **cherry tomatoes and mozzarella**, with **EVO oil** added to the oven exit.
For the uninitiated, true Neapolitan pizza is characterized by some well-defined requirements:
- The traditional margherita pizza is dressed with **peeled tomato sauce**, **mozzarella fior di latte** and **grated parmesan**. When leaving the oven, **EVO oil** and **basil** must be added
- The diameter can be up to **35 cm** (and in this case, the rule has been respected. In fact, if you notice it, the plate is not visible) 😊
- The dough is subject to a long leavening, which can go from **8 to 24 hours**. This allows the pizza to maintain a great lightness and high digestibility
- The cooking must be carried out in a **wood oven** for a maximum time interval ranging from **60 to 90** seconds and the ideal temperature for a perfect result is around **430°C** on the ground and around **485°C** at the roff. In this way, it should be possible to keep air constant which oscillates around **440/450°C**
- The Neapolitan Pizza must have a raised edge (the famous **"cornicione"**) and the ideal size is around 2 cm. The edge must be soft and elastic. If we crush it with a finger, it must come back up in a few seconds and it must not split. It's also very important that it is spongy: once the pizza is cut, the profile must have real holes of different sizes (exactly like a sponge)
- The slice of pizza, taken in hand, must have the tip **pointing downwards**. If it remains straight, it means that it's rigid and therefore doesn't respect the canons of the Pizza Verace Napoletana.

Since 1984, there is the association **AVPN** (Associazione Verace Pizza Napoletana) which protects and regulates the canons of the product and promotes it all over the world. There is a real international regulation paper in which the preparation procedures and all the peculiarities required for a perfect Neapolitan Pizza are described in a very precise way.
In addition, there is a list of affiliated pizzerias that have been verified by the association and that can display the AVPN logo. Let's say it's a kind of guarantee seal.

## Buongiorno a tutti!
Oggi vi faccio un **grandissimo regalo**. E' una delle mie più grandi passioni, spero vivamente che sia anche una delle vostre.
Condivido con voi questa straordinaria **Pizza Napoletana** che ho mangiato qualche tempo fa alla Pizzeria Angillotti di Casalnuovo, in provincia di Napoli.
C'è davvero poco da dire...la foto parla da sola. 😋
La pizza in foto è condita con **pesto di basilico**, **pomodorini e mozzarella**, con **olio EVO** aggiunto all'uscita dal forno.
Per chi non lo sapesse, la vera pizza napoletana è caratterizzata da alcuni requisiti ben definiti:
- la tradizionale pizza margherita è condita con **passata di pomodoro pelato**, **mozzarella fior di latte e parmigiano grattugiato**. All'uscita dal forno, vanno aggiunti **olio EVO** e **basilico**
- il diametro può arrivare fino a **35 cm** (e in questo caso, la regola è stata rispettata. Infatti, se lo notate, il piatto non è visibile) 😊
- L'impasto è soggetto ad una lunga lievitazione, che può andare dalle **8 alle 24 ore**. Questo permette alla pizza di mantenere una grande leggerezza ed un'alta digeribilità
- La cottura deve essere effettuata in **forno a legna** per un intervallo di tempo massimo che varia dai **60 ai 90** secondi e la temperatura ideale per un perfetto risultato è di **430°C** circa al suolo e **485°C** circa alla volta. In questo modo, dovrebbe essere possibile mantenere costante dell'aria che oscilli intorno ai **440/450°C**
- La pizza napoletana deve avere il bordo rialzato (il famoso **"cornicione"**) e la misura ideale si aggira intorno ai 2 cm. Il bordo deve essere morbido ed elastico. Se lo schiacciamo con un dito, deve ritornare su in pochi secondi e non si deve spaccare. Inoltre è molto importante che sia alveolato: una volta tagliata la pizza, il profilo deve presentare dei veri e propri buchi di diverse dimensioni (proprio come una spugna)
- La fetta di pizza, presa in mano, deve avere la punta che **rivolge in basso**. Se rimane dritta, vuol dire che è rigida e quindi non rispetta i canoni della Pizza Verace Napoletana.

Dal 1984, esiste l'associazione **AVPN** (Associazione Verace Pizza Napoletana) che tutela e disciplina i canoni del prodotto e lo promuove in tutto il mondo. Esiste un vero e proprio disciplinare internazionale nel quale sono descritte in maniera molto precisa le procedure di preparazione e tutte le peculiarità richieste ad una perfetta pizza napoletana.
Inoltre, esiste una lista di pizzerie affiliate che sono state verificate dall'associazione e che possono esporre il logo AVPN. Diciamo che è una specie di sigillo di garanzia.
