Ginger plants or in scientific terms called *Zingiber officinale Roscoe* is a more popular plant known as spice ingredients. Plants belonging to the family of zingiberaceae ie grass herbaceous plant with an altitude between 30-100 cm is still a family with *curcuma xanthorrizha, curcuma domestica, kaempferia galanga and Laguas galanga*

*Ginger plants are botanically classified as follows;*
- Division : Spermatophyta
- Class : Angiospermae
- Subclass : Monocotyledonae
- Order : Musales
- Family : Zingiberacaea
- Genus : Zingiber
- Spesies : officinale

Ginger plants in general there are three types ; white ginger, yellow ginger and red ginger. All three types have a spicy flavor. The type of red ginger has a greater essential oil content that has a higher spicy and bitter concentration than the other two types of ginger. So the red ginger is believed to have an important role in the world of medicine as a basic ingredient of pharmacy and traditional ingredients
