# Cooking With A Crock: Spicy Italian Sausage And Meatballs In Tomato Sauce

Crock pots. I love them. Who doesn't? They produce tender meats and rich sauces. Here I'll explain how I cook sausage links and meatballs in my crock pot.

Well, technically, I cook the meat beforehand. You see, I like my sausage and meatballs to be browned on the outside. This can't be accomplished by slow cooking in a crock pot. They either have to be fried on a stove-top or baked in the oven. I prefer baking in the oven.

#### Sausage Links
* Preheat oven to 350 degrees F.
* Place sausage on oven safe pan.
* Cook sausage for 20-25 minutes.
* Turn sausage over(if sticking, add water to coat pan)
* Cook for another 20-25 minutes.

I usually cook them for 22 minutes before flipping them. After another 22 minutes(44 total) I will check on them again. At this point I'll cut them in half and let them cook for 1-2 more minutes. Remove them from the oven and place the 8 halves into the crock pot. Increase the oven to 400 degrees for the meatballs. Time to pour the sauce over the sausage. 

#### Tomato Sauce
* 2 cans tomato sauce - 29 oz. each
* 1 can crushed tomato - 28 oz.
* Oregano and basil to taste

That's really it. I try to keep the sauce as basic as possible. I want it to get it's flavor from the meat. Now it's time to turn the crock pot on to the low setting.

#### Meatballs
* Preheat oven to 400 degrees F.
* Place meatballs on oven safe pan.
* Cook meatballs for 18-20 minutes.

Remove the meatballs from the oven and add them to the crock pot with the sausage. Stir to mix

 everything up. Put the cover on the crock pot and let the sauce simmer. I've let it simmer for 8 hours before.

Whenever I make this, I'll also buy a loaf of garlic Tuscan bread. It's an Italian-style bread brushed with garlic oil. Throughout the day, I'll pull a piece of sausage or a couple of meatballs out of the crock pot and put them on a slice of this bread. Toasted, of course. Bon appetit!
