When to Harvest Onions?

Onions are an easy crop to grow. What's not so easy, sometimes, is knowing when it's time to eat your crops.
Welcome to my garden, everyone! As you can see in the picture my volunteer onions have bolted.

Now, they're going to seed. According to the Gardening Know How website, which I will provide a link to below, onions should be harvested at this stage.

**Harvesting**
Here is my small onion patch. It is next to a strawberry plant and dill which were its companion plants (I was able to eat some strawberries thanks to the dense onions which likely kept the squirrels and o'possums away!)

To harvest them, I'm first going to pull back some of the mulch from around the base of the plant.

Then simply grab from the base and pull! You might have to loosen the soil around with a trowel first though or else you'll just end up with the green top. Then let the onions dry and cure for a few weeks.
Alternatively, they may be harvested once the green tops have died back and turned brown.

On closer inspection, my onions turned out to be green onions which don't produce much of a bulb at all.
The greens can be harvested as soon as they're at least 6 inches tall.
Now that I have finally identified them, I've changed my mind about transplanting them. I was originally planning on dividing the patch and planting the onions individually around my raspberry patch as companions but since I don't use chives much, all I did was spread a few seeds and compost the extra plants.

I've got some yellow onions growing, and I thought they were dead until a month ago when new thin sprouts re-emerged from the soil. My green onions have much thicker stalks than the yellow onions. Guess I'll wait all winter and see how they look in Spring. Not sure what the secret is for my cold and wet climate.

Well bulb development does occur in the cooler temps but yeah that wetness probably isn't helping. My dad mistakenly planted onions in summer once but they came back in the fall
