NG's Recipes - 10 - Rice Puda

So, it’s a Saturday and I woke up late. Not that it makes a difference given the lockdown in place. Everything is anyway shut :P But I guess psychologically it still has an effect. With the operational word being “it still”, who knows in a few days it will stop making a difference and everyday will be Saturday! 

So today I thought let’s cook and a quick but interesting recipe. And you know the maxim it must be Tasty and Healthy! Today we will make Puda. It can be made of various ingredients such as Rice Flour, Chickpea Flour etc. We will look at a fusion recipe so that we get the nutritional benefit of both the grains. It will be a combination of Rice Flour and Chickpea flour. The stuffing I use is predominantly cottage cheese and vegetables. However, one can also look at meat-based stuffing in case their diet is so. I tend to suggest both cooking oil and Ghee in my recipes. I prefer Ghee mostly since its healthier and tastier than cooking oil.  

So, let’s get to it. Below are the ingredients. Serves two.

**Ingredients**

1 cup rice flour
½ cup chickpea flour
125 grams cottage choose grated.
1 tomato finely cut
1 onion finely chopped
1 green chilli finely chopped – Optional
Red chilli/ Pepper - Optional
Cooking Oil / Ghee (clarified butter) / Butter

**The Recipe **

Mix the rice flour and chickpea flour together in a bowl. Mix with 2-3 cups of water. Check the consistency you may have to add or reduce some water. It should NOT be too thick that it does not spread well on a flat pan and it should NOT be so watery that you cannot control it on a flat pan. 
Add salt to taste, mix well and keep aside.

Mix the cottage cheese with the tomato and onion. You can add other items to the stuffing also.
Add salt to taste.
Add some chilli powder/pepper.
Mix the whole mixture. Keep Aside.

Heat a flat pan on low to medium flame. Ensure the pan becomes hot before you pour the oil.
Pour a bit of the flour mixture over the flat pan and spread into a nice round shape.

The step above may be difficult for those not used to it. So, an easy way around it to take it in a small bowl as shown in the pic pour the liquid on to the pan and use the base to spread it nicely and evenly into a circle. Round circular motion with the bowl is the way to do it. DO NOT USE A PLASTIC BOWL.Find pics below.

Let the flat cake cook for 45-60 secs. Use a thin spatula to see if the same can be lifted. Pretty much the way we would do with an omelette to see if it’s ready to be flipped. Cook till its ready for a flip.

Add some of the stuffing in the middle. 
Fold the flat cake over the stuffing to make a semi-circle.
Flip over a couple of times and cook for a minute.

Serve on a nice plate with salad and pickles.

You can also double this with some other side dish if quantity is an issue.
