Veg/vegan is a beneficial, short term practice, a bit like fasting. The idea that all necessary nutrients can be got from only vegetation ignores bioavailability, and antinutrients, not to mention that vitamin K2 is only available in animal products or synthetic supplements, unless you like to dose the body with phytoestrogens from fermented soy. Vitamin B12 is also available in animal products, unless you can eat grains or legumes, which I can't. Even among the animal products that contain B12 are shellfish, to which I am allergic.

It basically comes down to people with black and white thinking, absolutist mindsets that want to apply blanket statements to things as varied as an omnivore's diet. It's similar to saying, 'all metals are solid'. This is clearly dependent on conditions. At room temp and one atmosphere, mercury is liquid. At 11000 degrees F, and one atmosphere, even tungsten becomes a gas.
