Talking about pasta can be very overwhelming and this is a type of food that is easy to get along with. From the regular pasta that we know particularly us Filipinos (sweet style spaghetti), we have already been seeing a lot of flavors being introduced in the market. One of the famous pastas in the Philippines is that from Yellow Cab! 

Yellow Cab is well known for their pizzas actually, which aren’t questionable as they stand true to their taste. The price could be a bit of an issue at times, so I personally save up to get a piece of heaven on my dining table. But considering top picks when it comes to Yellow Cab, I guess most if not all will agree when I say, that Dear Darla Pizza and Charlie Chan Pasta are indeed top of mind! Can I hear a YES? Hehe... Who will say otherwise right? Your appetite will definitely shout out loud when you pampered it with these two delish meals. 

The COST! Is it an issue really? For me YES! Being on the practical side of the coin, I would really need some time to spare money for Yellow Cab. The amount you will need to have it is not something anyone can afford.

The CRAVINGS! How do you actually deal with cravings? Truth be told, cravings can sometimes over power practicality in spending hahahaha ... It’s true most of the time I should say. Take for example other social media platforms, how often would you see a post with the hashtag #cravingSatisfied? Almost everyday huh! 😂 Because as humans we always find it easy to decide on things that will give us immediate gratification. That’s how life goes hahaha FUN and EASY!

If COST and CRAVINGS will have to meet halfway ... you must have The SOLUTION!

Well, being a kitchen/food addict and critic, I hope the one I have figured out will help you satisfy your cravings for Charlie Chan Pasta. This version of mine came from an accidental visit with a client here in UAE, she told us her ingredients & procedure and owned it by adjusting some of the ingredients thus #myversion was born. 😉

INGREDIENTS ARE BASED ON A 500gms PASTA

You may opt to use other mushroom types and may also add additional pieces if you prefer having more mushrooms in your pasta.

Avoid putting too much garlic. It can be overpowering and nah uh 🙊 it will spoil the taste, since we will be using ready made sauce already.

Ideally, fresh chicken shall be used, in this case since my mom accidentally included the chicken breast I have separated to the ones she boiled for her chicken sandwich, I have no choice but to use it, I will just adjust the cooking time then. 😉

Clara Olé Kung Pao sauce is currently not available here in UAE, so I am sourcing mine temporarily from the Philippines.

This brand is guaranteed good! Though you may use the brand of your choice, just remember to cook the pasta ALDENTE only, since it will be mixed with the sauce that may change its consistency.

If you have salted peanuts, just adjust the salt that you will add. For better taste, you may opt to separate another set of peanuts and freshly chopped onion leeks and will be added prior serving the pasta.

For the OIL that you will use for frying, I will suggest using CANOLA or OLIVE oil. Just put enough amount to sauté your ingredients.
