<html> <p>Achar is an Indian pickle that is preserved in a spicy oil. It is eaten as a side dish or like a relish on the side of your meal. So like when you cook lentils, achar is eaten on the side with it or with any food in general. You could put it in a sandwich or eat it with food or bread. It adds an extra spicy flavor to your meal. I will be sharing an achar recipe that I have come across, it is commonly known as "chow chow achar" </p> <p>How to make:</p> <p>You will need:</p> <ul> <li>Diced onion </li> <li>Diced carrots </li> <li>Diced cucumber </li> <li>Green beans </li> </ul> <p>Boil the vegetables separately in salt and bicarb. </p> <p> To make the paste, you will need:</p> <ul> <li>1 cup vinegar</li> <li>1 cup water </li> <li>1 cup oil</li> <li>1 cup corn flour</li> <li>1 tsp white pepper </li> <li>1 tsp paprika </li> <li>1 tsp mustard</li> <li>Sugar and salt (to taste) </li> <li>Mayonnaise </li> </ul> <p>Heat on the stove till smooth. Then add the vegetables and mix well. Store in the fridge.
