## *How To Make Biryani Rice*
*Biryani is a popular Indian and Pakistani dish consisting of rice, seasoned vegetables, and meat. You can make biryani with beef, chicken, or lamb. It usually takes about 20 to 30 minutes to prepare the dish.*

*Start by cooking the saffron-flavored basmati rice. Cook the potatoes separately in salted water until they are just tender. Blanch the peas by boiling them for two minutes in salted water. Finely chop onions, garlic, ginger, tomatoes, green chilies and coriander leaves.*

## *Ingredients should include:*

**<li>6 tablespoons of vegetable oil</li>**

**<li>4 tablespoons of grated fresh ginger</li>**

**<li>4 teaspoons of ground cumin</li>**

**<li>2 teaspoons of ground coriander</li>**

**<li>1 teaspoon of turmeric</li>**

**<li>3/4 cup of boiling water</li>**

**<li>2 tablespoons salt (or to taste)</li>**

**<li>Freshly ground black pepper (to taste)</li>**

*Rinse the meat and marinate it in a mixture made from grated ginger, garlic, green chilies and lemon juice. Set aside for at least one hour. Next, chop onions and saute them until they are brown. Remove with a spoon and set aside. Add oil to the pan and fry potatoes on medium heat until golden brown. Place the fried potatoes over paper towels so they will absorb any excess oil. In a separate pan ,heat four tablespoons of oil . Brown the spices in two batches: First, add half of the bay leaves, cardamom pods, cloves, cinnamon stick, cumin seeds and coriander. Fry them for about one minute. Then add half of the onions. Leave aside until browned to make a paste in the pan.*

*Remove any excess oil from pot or skillet used for frying potatoes. Add onion paste to potatoes and fry it for 10 minutes over medium heat. Next, fry the second batch of spices along with onion paste for another five minutes without burning them. Now return fried potatoes to skillet or frying pan. Stir continuously until all potato pieces are well-coated with spice mixture, adding 1/4 cups boiling water if necessary.. Place marinated meat on top of the potato mixture.Cover the pot, then simmer on  heat for  30 minuts. Transfer the meat to a serving dish and garnish with fresh coriander leaves, fried onions and lemon wedges. Serve biryani hot accompanied by raita or salad.*</center>
