Ask your husband what to change to the recipe.
I wonder why your kid does not like it. Is it the kind of jelly or the syrup taste not strong enough?

I never made a jelly pudding it looks a bit weird to me as if you eat plastic. 
I only use it for quark pie (no oven needed). My children like that too but prefer the one made in the oven more (me too). 

_Never put something hot in the fridge. It's not good plus it will raise your electricity bill._

Have you ever tried those jelly candies?
We have little ones called "tum tum" but you have bigger, harder ones called "winegums". It's mainly jelly with a taste. If you could make that, just a bit softer, your kid will love it. I do not know how by the way. Perhaps there's a recipe on the internet?
