Wow! I have never heard of this contest before and I now I will never enter. I am completely exhausted just by reading your post. The only thing I think I have ever eaten out of all of this is the fairy floss. They make something like this in Thailand and I was wondering how you would get strings of sugar, so thank you very much for that info. Yours looks very good compared to the time I had it. Over there, they just sell you a big lump of strings and a crepe and then you go into a coma after that. I had your post open without looking to let the photos load. When I came back I saw the top photo with out reading the title and I thought this was a fried egg sunny side up. So I am glad to know there are eggs in here. Amazing job with the cooking, the huge effort, the text and the photos. If someone else worked harder than you on this, I will have to see it to believe it.

Thank you @fitinfun. The fairy floss is in fact a Chinese inspired recipe of the dragon beard. They use the same technique to make noodles, usually after the 5th time making the “8”. The yellow element on the coconut sorbet is in fact a mango purée. I didn’t document the steps in making it as it was used for presentation rather than an integral part of the recipe. That's very interesting to know it's like the noodles. I am in Kuala Lumpur now and I have seen them making those through a few restaurant windows. I will follow for sure, but I really do not think my food is up to this level. I do not cook too much anyway since food is so good and cheap here right outside my door :)
