I have to admit I have never been an eggplant fan but it has definitely been growing on me. Now I find myself cooking with eggplant quite often. It's so versatile and I really like your idea of using it as a sauce for the spaghetti squash pasta. The ricotta tofu sounds super flavorful and adds some protein to this dish. Good luck!
