Love the combination of the spaghetti squash, eggplant /pumpkin sauce and tofu ricotta! The sauce and ricotta sound flavorful. Would love to try making the tofu ricotta as it looks tasty and creamy, adding a wonderful layer of texture and flavor to the dish. I know, 'free for all' sounds fun but challenging too as the options are endless. Great job narrowing it down to this dish though!
