I use recipes as a guide, usually one read though and I have the gist (other than complex baking then I follow more closely)  and constantly taste and adjust seasonings because that is such a personal thing. I know some recipes aren't written very well but I think for the most part you've got to take the idea and make it your own.

Yes exactly!  I use them in the same way, as a great starting point!  I think it’s really important to taste as you go and learn to adjust the seasonings as needed. Thank you so much for your input :)
