I've been buying in bulk for decades . . . when possible. We have a wonderful small health food store, about half an hour north of us, where I buy virtually all my herbs . . . they are at the very least non-GMO and non-chemically grown, and at best organic. Being roughly in the middle of nowhere, they're pretty much the only game in town. And, they are typically a fraction of the cost of those in the supermarket, especially as I am buying in larger quantities. They also have a small selection of dried seeds, beans and grains, and a few prepared mixes. We create very little waste, as we compost all organic waste, burn our paper waste, and recycle everything else possible, and we are fortunate that our local recycling center is only about five minutes from home. Being in a rural area on acreage, there is no curbside pickup available. That said, as much as I'd love to refuse all plastic, I'm not there yet, but I do recycle what I bring home. And I'm a canning jar junkie. Our kitchen has all manner of dried legumes, grains, seeds, herbs, spices and other foods in canning jars, large and small.
